What is Sansok?
Sansok is the newest concept from chef Yohan Min, who built his reputation on Netflix’s Culinary Class Wars Season 1 and as founder of Dosigotgan, a Korean banchan specialist with 50-plus locations across South Korea.
He also runs Bibim Deli, a pay-by-weight bibimbap concept in Singapore with two outlets in JEM and Suntec City.
Sansok is built around hansang: the traditional Korean table setting where rice, soup, banchan, and a main dish all arrive together. The concept is a personal one for Min, drawing on his mother Park Jung Ja’s home cooking and the more than 1,000 banchan recipes he’s developed over his career.
The Binchotan Charcoal Grill

Rather than opening in town, Sansok chose Hougang Mall for its debut, offering an accessible and affordable Korean dining experience rather than a destination restaurant.
The 64-seater space is decorated with Korean lattice detailing, natural wood finishes, and earth tones reminiscent of a hanok.
But the heart of Sansok is the open charcoal grill! Fuelled by binchotan, customers can watch their meats be prepared a la minute, perfumed by the smokeiness of the grill.

Sansok has a lunch and dinner menu. Both menus carry the same lineup; what differs is the portion size, banchan count, and price.
There are four signature dishes: Spicy Braised Mackerel Stew, Salt-Cured Mackerel, Dwaeji Galbi, and Tteokgalbi & King Oyster Mushroom.
All their items come in sets with banchan (4 banchan for lunch, 6 banchan for dinner) and pot rice.

What We Tried

The Spicy Braised Mackerel Stew (Godeungeo-Jorim, $15.90) is their signature for good reason!
This humble stew features big chunks of mackerel simmered with white radish in a rich, spicy gochujang broth. While very common in Korea, it’s not often found here.
Sansok’s iteration is spicy, hearty and incredibly flavourful! There’s a fattiness from the mackerel but no weird funk or fishiness.
Instead, it adds to the depth of the gravy, with the punchy chilli making it extra shiok. It also goes perfectly with their pressure-cooked rice.
The fish chunks are big and meaty but on the boney side, so exercise caution when eating!

If fish isn’t up your alley, their Spicy Jeyuk Pork (Jeyuk Bokkeum, $13.90) is a good alternative. The slices of gochujang-marinated pork shoulder are finished on the charcoal grill, creating a smoky and spicy flavour.
There’s also Smoked Beef Bulgogi (Bassak Bulgogi, $15.90) with the familiar savoury marinade, but unfortunately our serving was a tad tough and chewy.
These dishes are designed for rice, so it’s on the saltier side, but satisfying nonetheless.

The banchan here is made using Chef Min’s recipes and they are refillable! We especially liked their seasoned cucumber and soy-pickled radish.

Their take on Tteokgalbi & King Oyster Mushroom ($15.90) was also surprisingly good, with a juicy centre and rich beefy flavour.

We also got to try their signature dinner menu: Whole Salt-Cured Mackerel (Godeungeo-Gui, $21.90).
Served with perfectly blistered, shiny skin, this was a highlight for us! The meat was moist, juicy and flaky, with the salt-curing process concentrating the flavours to make it umami and lightly briny.
It’s also big enough to be comfortably shared amongst two to three people, making it suitable for group meals.

At a $2 top-up, customers can enjoy access to the free-flow drink bar and DIY bingsoo corner! There are six drinks to choose from, including two slushies – blueberry and omjia.
The bingsoo corner has a good selection of toppings, including red bean and Biscoff crumbs, with freshly shaved milk ice. This is a value-for-money deal, and we recommend getting it!
