TL;DR: Moutai House Singapore, Southeast Asia’s first Moutai lifestyle destination, opened at The Fullerton Waterboat House on 19 October 2026. The three-storey space houses the region’s largest Moutai collection of more than 300 labels, a fine Chinese restaurant by Imperial Treasure, and a rooftop bar by Nutmeg & Clove’s team.
Opened at The Fullerton Waterboat House on 19 October 2026, Moutai House Singapore brings together three major names under one roof: Kweichow Moutai, a Chinese restaurant helmed by Imperial Treasure, and a rooftop bar created by the team behind Nutmeg & Clove.
It marks Southeast Asia’s first Moutai lifestyle destination and the brand’s first venue globally to launch its new retail identity.
What Is Moutai House Singapore?
Moutai House Singapore is a luxury multi-concept venue at The Fullerton Waterboat House. Occupying all three storeys of the historic 1919 building at the mouth of the Singapore River (formerly occupied by Starbucks), the space pairs an interactive Moutai gallery at ground level with fine Chinese dining and a rooftop cocktail bar above.
The space is designed for both longtime baijiu drinkers and people who’ve never tried Moutai before, with the three floors meant to be visited in any order.
What To Expect At Moutai House Singapore
Part gallery, part restaurant, and part rooftop bar, the venue caters to all visitors, with separate sections that have distinct offerings.
| Floor | Space | What’s There |
| 2 | The Experiential Centre | Gallery highlighting Moutai’s history, heritage, and production process |
| 3 | Imperial Treasure Moutai House | High-end Chinese cuisine paired with a baijiu-focused beverage menu |
| Rooftop | SOHAUS | Rooftop bar serving cocktails alongside views of Marina Bay |
Explore Over 300 Labels Of Moutai
The ground-floor Moutai Experiential Centre is the highlight of the space. This multisensory walkthrough uses sight, scent, touch, and taste to explore Moutai’s rich history, production process, and distinctive sauce-aroma style.
More than 300 Moutai labels will be on display here, ranging from entry-level bottles to rarities valued at up to S$1 million, making it the largest collection in the region.
Singapore also gets its own exclusive release: the Kweichow Moutai Discovery Collection – Singapore.
The bottle pairs the brand’s signature Feitian red, its iconic flagship label, with Nanyang-style Southeast Asian design elements and a nod to Singapore’s national orchid, the Vanda Miss Joaquim.
Discover A Birth-Year Moutai Collection Dating Back To 1965
One of the more personal touches is Southeast Asia’s first dedicated birth-year Moutai collection, with annual vintages going back to 1965, the year Singapore became independent.
Guests can look for a bottle tied to their birth year, anniversary or other milestone and turn it into a keepsake or gift, which is a nice touch.
Dine At Imperial Treasure Moutai House
The third floor is a Chinese restaurant run by Imperial Treasure, the Singapore-founded group with 8 MICHELIN Stars across its restaurants in Shanghai, Guangzhou, Singapore, Hong Kong and Paris.
This outlet is focused on Guizhou and Huaiyang cuisine, pairing Guizhou’s spicier, more fermented flavours with the gentler, more refined techniques associated with Huaiyang cooking.
The kitchen incorporates Moutai straight into the cooking itself, through technique-heavy preparations like braising and ‘drunken’ marinades.
The dimly lit dining room has dark wood and deep green armchairs, giving it an intimate, refined feel.
Alongside an à la carte menu, five set menus run from $98++ to $398++ per person, and the outlet also has new dishes not found at other Imperial Treasure restaurants, including a shark’s fin soup. At our preview, each course was paired with Moutai, including the Singapore-exclusive Discovery Collection and Culture Collection.
Braised Shark’s Fin with Seafood and Bamboo Pith In Sour Soup
The shark’s fin was tender and broke apart in the mouth. The sourness of the soup was akin to a tomato soup, and the spice was peppery rather than chilli-hot, which made it quite appetising.
Three Ways Marble Goby ‘Soon Hock’ Fish
The marble goby was served three ways:
- Deep-fried rolls wrapped in beancurd skin
- Steamed and wrapped around mushrooms
- Diced fillet stir-fried with honey peas
The deep-fried rolls were the best! The batter was crispy and flavourful, complimenting the lighter taste of the goby.
Braised Pork In Jiangnan Style With Hokkaido Sea Cucumber
The gravy was smooth and packed with umami which went nicely with the tender pork.
The Hokkaido sea cucumber was tender and bouncy, soaking up the gravy to give it a wonderful flavour.
Fried Rice In Yangzhou Style
Fried with diced sea cucumber, chicken, ham, shrimp and conpoy, this had a subtle wok hei and moist fried rice.
It was light and not oily, making it a great way to finish the meal.
SOHAUS: Rooftop Bar In Fullerton Bay
At the top of the building is SOHAUS, a rooftop bar developed with Nutmeg Collective, the group behind Nutmeg & Clove, which ranked No. 12 on Asia’s 50 Best Bars 2026 and No. 50 on The World’s 50 Best Bars 2025.
The name is a mashup of “Social” and “House”, functioning as a rooftop ‘’living room’’ over the Singapore skyline and waterfront.
The outdoor deck has a cosy and comfortable vibe, while the indoor standing bar is much smaller and can only fit about nine people.
At night, you can easily see the Singapore skyline from your seat. It’s a great spot for F1 fans too!
The drinks list has 16 cocktails in total: 8 original creations built around Moutai, and 8 classic cocktails reworked with Moutai-inspired flavours.
It’s meant to be approachable for people who’ve never had baijiu, while highlighting its signature robust flavour.
A special line on the menu recreates recent trends as drinks, from a matcha cocktail and a Dubai chocolate one to a mala and even a sneaker-inspired cocktail.
Blind Box Fizz ($28)
Inspired by the blind box craze, this is SOHAUS’s take on a Singapore Sling. It arrives in a box that’s opened at your table to reveal the drink, before the box is taken away.
It tasted just like guava, sweet and fizzy like a fruit punch. The alcohol taste was not too punchy, making it one of the more enjoyable cocktails we’ve tried.
We also tried the Sohaus Highball ($28), which was strong, so it’s better suited to those who like a spirit-forward drink.
More than just a retail space, Moutai House Singapore positions baijiu as a modern lifestyle choice beyond Chinese New Year banquets. Spread over three storeys at The Fullerton Waterboat House, it offers flexibility by design, letting guests drop in for a cocktail at SOHAUS, sit down for dinner, or explore all three floors at their own pace.
