Gear up for a night of artisanal cocktails at The Bar at 15 Stamford, located in the Capitol Kempinski Hotel. Their new menu of 16 cocktail creations are inspired by flavours found in the Austronesian region, consisting of countries like Singapore, Taiwan and New Zealand.
Divided into two sections – Austronesian Islands and Signature Cocktails – patrons are free to choose from the selection of hand-crafted cocktails with one-of-a-kind flavours.
Austronesian Islands: Flavours From Taiwan, New Zealand, Papua New Guinea
The lineup begins with the Ilha Formosa 1542 ($25), the name given to Taiwan in 1542 by Portuguese sailors. With Tie Guan Yin tea as the main flavour profile, the cocktail is shaken with jasmine tea, cognac, gin and dry vermouth for a fragrant, citrus drink. The nation of New Zealand is represented by Endeavor 1769 ($25), a gin and mezcal-based cocktail with citrus, passionfruit and kiwi notes topped with edible glitter.
There’s also the Lakatoi 1885 ($25) reminiscent of Papua New Guinea, with rum, banana liquor, Aperol citrus and orange bitters, inspired by the history of how bananas were the main export of the Motu people of the island. There are also a variety of other cocktails to try, each embodying a part of the heritage and history of the Austronesian regions.
Signature Cocktails: The History Of Joseph Balestier
The Capitol Kempinski Hotel was actually once home to Joseph Balestier, the first appointed US Consul to Singapore, who produced rum in Singapore for a period of time in the 1830s. The selection of cocktails pays homage to this part of the hotel’s history, starting with the Plantation 1840 ($24).
The base is Black Tears Rum, mixed with sweet vermouth, pineapple juice, sugarcane juice syrup and fresh mint, paying homage to Balestier who planted pineapple and sugarcane during his time on the island. There’s also the Remember the Balestiers ($24) is a twist popular cocktail Remember the Maine, replacing whisky with rum and mixed with sweet vermouth, cherry brandy, cherry liqueur and absinthe.
If you’re looking for something more intense, you can go for the Peranakan Old Fashioned ($24) made with house-made falernum, pandan and gula-melaka notes, and is served with a torched cinnamon stick for a multi-sensory experience. The menu also features over 200 rums for your choosing, including the Don Facundo’s Legacy ($40), telling the story of Don Facundo Bacardí Massó, who founded the first BACARDÍ rum distillery in Santiago de Cuba.
