Opened by the Chef behind Michelin-starred restaurant Sushi Kimura, Shin Yasuke is a sushi-only omakase joint in River Valley. The unassuming omakase restaurant sits on the first floor of the Loft @ Nathan condominium complex, serving up quality cuts of seafood on their signature vinegared rice.
Authentic Sushi Omakase in Singapore
Compared to Shin Yasuke’s price for an omakase meal, Shin Yasuke is comparatively cheaper – the only catch is that the entire meal focuses on sushi only. For $180, you’ll get 15 pieces of sushi made using the same vinegared rice and wasabi at Shin Yasuke.
There are also cheaper options for lunch, with a 10pcs Sushi Omakase priced at $98 and limited chirashi sets at $58 (limited to 4 sets daily).
The restaurant has a more casual feeling, with only 12 counter seats.
Shin Yasuke Sushi Omakase
We started the meal with Flounder topped with lime and sea salt, and the first thing we noticed was how the rice had a tinge of colour to it. Shin Yasuke uses aged red vinegar for their rice, which gives it a unique taste. Honestly, we would eat a bowl of this, so good!
Throughout the meal, we were introduced to both familiar and unique cuts, such as Tai (Sea Bream), Marinated Bluefin Tuna, Mackerel, Aburi-ed Barracuda & Kinmedai.
The highly loved Chutoro & Otoro was also served, alongside a Horse Mackerel that was topped with white leek and ginger.
One of the most interesting sushi was the Squid with Rainbow Sesame, which is something like a furikake but with different vegetable flavours. The squid was creamy and had an almost sticky texture like caramel.
The Botan Ebi was also bursting with sweet flavours, and was creamy and crunchy at the same time! We also got to try sushi with abductor muscles from a shell, Bafun Uni, and Clam Shell.
After the last sushi was served (a chopped tuna with radish pickles), we were treated to a bowl of miso soup which had a smokey tinge to it.
For pre-dessert, we were served a piece of Tamago made similar to the ones in the Edo period, which is known as Atsuyaki Tamago Castella, which surprisingly contains sticky yam, fish, and egg – but tasted like a fluffy castella cake!
We ended the meal with a Pear Sorbet and Vanilla Cream Jelly, which were both really simple yet delicious.
Shin Yasuke Review
While you won’t get to see Chef Kimura in action at Shin Yasuke, the restaurant is helmed by a team that has trained under Chef Kimura, using same quality ingredients from the Michelin-starred restaurant. Evidently, the sushi we had was of great quality and we were impressed with how Chef Alan explained each sushi to us.
