Bedrock Origin in Sentosa is hosting its popular Great Beef & Reef 2026 Edition II, a surf-and-turf-inspired menu. The à la carte menu is available from 1 June to 31 July 2026, this time inspired by traditional techniques like curing, ageing and drying.

The menu features five dishes and three different proteins, each prepared using the age-old preparation method of time.

To start, there’s the Salt-aged Cured King Salmon ($22++) with Australian Oscar King Fish topped with apple jelly, ceviche, horseradish cream and yuzu ponzu-dressed trout roe.
Something interesting is the Kombu-aged Seabass ($38++), featuring locally farmed fish wrapped in kombu and dry-aged for 7 days, resulting in a unique, umami-rich flavour.
Pan-seared to a golden skin, the fish is finished with basil herb oil and béchamel. The seafood notes are amplified with surf clams folded through the sauce!

Shifting from sea to land, the Smoked Maple Duck Breast ($38++) features an aromatic braise of cinnamon and star anise, finished on the grill for a crisp skin.

The Dry-aged Corn-fed Striploin ($98++ for 300g) is the centrepiece, with dry-aged, corn-fed beef sourced from Argentina.
Grilled over Bedrock’s signature applewood fire, it is accompanied by sautéed sweet peas and French morel mushrooms sautéed with veal jus.
There’s also a curated wine selection from Voyager Estate, Australia, the acclaimed Margaret River producer.
Enjoy the selection of whites and reds, including Sauvignon Blanc Semillon and Shiraz, available by the glass from $16++.
