We’ve all heard of Wagyu steak, but have you ever heard of a Wagyu crossbreed? Wagyu X in Telok Ayer offers a unique breed of Wagyu that combines the recognisable marbling with a robust beef flavour, not commonly found outside of Japan!
Wagyu X Menu
There are three cuts of the special Wagyu X crossbreed – Sirloin ($160/500g, $300/1kg), Ribeye ($125/500g, $240/1kg) and Tenderloin ($120/250g, $230/500g). The minimum order is 500g as its the best thickness for texture and flavour. We gauge that is can comfortably feed 3 people.
They have a menu of appetizers including Maguro Tartare ($24) and Mushroom Cappucino ($14). To go with your steak, there’s sides like Mashed Potato ($12), Charred Asparagus ($16) and Caramelized Japanese Sweet Corn ($12).
Appetizers
The meal began with two appetizers, the first being the Corn Mousse with Uni ($30). The dish comes with three spoons by default, each containing a bite topped with ikura.
We enjoyed the creaminess and sweetness of the corn, complemented by the salty pop from the ikura and uni. The favourite was the second Hokkaido Scallop ($26), served with a flavoured butter.
The scallop was cooked perfectly, coated in the delicious butter and capsicum mixture. It was full of umami and we suspect they used a bit of Wagyu fat!
Wagyu X Ribeye
Each order of steak takes about 30 minutes but its well worth the wait. The Ribeye was served perfectly medium rare with an appetizing crisp crust, whetting our appetites. It came with a whole confit garlic, garlic chips and ponzu sauce.
It tasted as good as it looked! Each slice had a clean fattiness but a stronger beefy taste than usual Wagyu, providing a good bite. We highly recommend eating it with the confit garlic – it adds a nice creaminess to the meat.
Wagyu X Sirloin
For something on the meaty side, the Sirloin is the perfect choice. It had the same enjoyable Wagyu fat flavour but slightly less oily than the Ribeye. Both steaks come with an incredible amount of fat, so much so that there are pieces that are fat-only!
The provided ponzu sauce was equally flavourful but we think the meat can be enjoyed without it. They also have a housemade Japanese steak sauce made with beef trimmings and wasabi shoyu.
Sides
There are plenty of side options to choose from, including the Creamed Spinach ($12) and Mushroom Tempura ($16). We recommend getting the Matsutake Fries ($12), which are coated in a matsutake oil. It’s a unique take on truffle fries, but much less jelak and easier to eat!
There’s also the Roasted Japanese Pumpkin with Walnut ($12) for a sweet contrast. The crunchy, sugar-coated walnuts were quite addictive!
Dessert
We got to try their Tiramisu ($18) and Burnt Cheesecake ($18), both of which exceeded our expectations! The Tiramisu had the perfect balance of coffee and sweet cream, while the Burnt Cheesecake had an enjoyable smooth texture.
Specialty Wagyu Restaurant In Telok Ayer
We do think the beef at Wagyu X is different, providing a rather memorable Wagyu experience! The price point is steeper than usual Wagyu restaurants but we think its worth the try for a special occasion. Here are more interesting eats in the Telok Ayer area!
