Pullman Singapore Hill Street will launch a new Sunday brunch concept, The Sunday Bucket at its dining venue, Madison’s, starting 17 August 2025.
This Southern-style seafood broil experience will only be available on Sundays, from 12:30pm to 3:30pm.
Seafood Boil
The Sunday Bucket features buckets of prawns, crayfish, lobster, corn, and more poured directly onto the table.
Diners can choose between two sauce flavours – Mala Chili Oil & Dry Spice and Lemon-Garlic Cheese & Herb Crumb.
We opted for the Lemon-Garlic Cheese & Herb Crumb, and we found it really flavourful and fragrant. The seafood itself was quite good, very meaty and tender!
We really enjoyed the prawns, which were surprisingly quite sweet.
Each seafood bucket is accompanied by 5 sides: Truffle Mac & Cheese, Grilled Focaccia, Soft Scambled Eggs, Asian Slaw with Sesame-Lime Dressing, and our favourite – crispy French Fries with Sambal Aioli.
The portions were so generous — we were genuinely shocked that all of this came at just $58++!
The brunch also includes desserts and optional free-flow beverages like champagne, with prices starting from $58++ for two people.
We tried the Merlion Flame which features pandan coconut gelato with nata de coco. It was the size of a small cake, and super filling for the both of us!

Overall, we thought the experience at Madison’s was well worth the price for the generous portions and variety of food. Definitely worth dropping by for a Sunday brunch!
