Ever grilled a whole fish over charcoal before? You can try it yourself at GRILL By CUT in Bukit Timah Plaza! This dine-in concept by Cut Butchery lets you choose your meat of choice and have it prepared in the restaurant at no additional cost.
Premium Meats & Dry Aged Fish
Cut Butchery offers premium meats at fair prices. The options include in-house dry-aged beef, marinated chicken, pork and even dry-aged fish!
The Bukit Timah outlet boasts a fresh seafood market with a rotating selection. The chefs can recommend the best preparation methods for each fish, ranging from sashimi to miso soup.
A cool part about GRILL By Cut is that you can choose any cut in the butchery (seafood included) to be grilled at the restaurant at no extra charge. There’s a $10 top-up for two sides and one soup.
Each fish can even be prepared in multiple ways!
GRILL By CUT Menu
Their menu includes familiar Japanese fare like donburi, noodles and even sukiyaki sets!
Choose from items such as the Wagyu Don ($18.80) and Mentai Aburi Salmon Don ($17.80), or the Smoked & Aged Duck Inaniwa Noodles ($19.80).
They also offer a la carte yakiniku meat cuts ranging from beef to chicken and duck!
There is the USDA Jo-Karubi ($25,100g) or the 150days Grain Fed Ribeye ($19.80, 150g), alongside Butter Aged Pork Belly Samgyeopsal ($22, 150g) and Lamb Cutlets ($32 for 3pcs).
If you fancy Wagyu, get their All Day A5 Wagyu Buffet ($98.90++/pax, 80 minutes).
The buffet includes 7 different Wagyu cuts – like A5 Satsumagyu Karubi and Ribeye Cap – plus pork, ox tongue and more with freeflow soft drinks.
Sashimi Platter
The chef recommended three fish for us: Mori ($30.45), Isaki ($56.75) and Aji ($20.30). The prices will vary depending on weight.
The Mori was turned into sashimi, with one section of it aburi-ed. He paired it with other cuts including salmon, scallop and bluefin otoro on a sashimi platter (~$48).
We liked the firm texture of the Mori. It didn’t have a striking flavour but had an enjoyable cleanness and sweetness, amplified on the aburi version.
The other cuts of sashimi were equally fresh and satisfying!
Dry-Aged Hamachi
We also got to try their Dry-Aged Hamachi Sashimi ($12 for 3 pcs). It had a glossy sheen and darker colour compared to regular hamachi.
This was incredibly buttery and rich, with the dry-aging process concentrating the flavour! Its on the pricey side but we highly recommend you try this.
Whole Grilled Fish
The Isaki and Aji were expertly cleaned and skewered. They were salted too so we only needed to put it on the grill!
Both fish came out tender and juicy because of the grill, making it a fun experience.
The Aji reminded us of sabah fish. There was a negligible fishiness but we liked the fattiness and flaky meat. It was even better with the crispy skin from the grilling.
Our favourite between the two was the Isaki. This fish had a sweeter and fleshier meat, giving a better bite!
Miso Soup
That’s not all – the chef even turned the Mori fish bones into a miso soup! This was a great end to the meal. The broth was warm and umami-packed with a subtle fish flavour.
$10 Donburi Promotion
