Dry-Aged Fish in Singapore
With the dry-ager located right next to the entrance, you can see descaled and gutted sashimi-grade fish on display, where they are dry-aged for a period of five to thirty days in a controlled environment.
The dry-aging process improves the fish in terms of flavour and texture, where you’ll get intense flavours and improved firmness. You can either eat the fish raw or pan-seared lightly with seasonings like salt and olive oil.
Right now, they have Dry Aged Ora King Salmon (from $12 per 100g) and Dry Aged Samegarei (from $12 per 100g). However, if you have other types of fish you want to dry age, you can speak to the staff who will advise you accordingly.
