One Prawn & Co is a modern Asian seafood restaurant famed for its dry-aged and wood-fired creations. It’s helmed by Chef Gwyneth, who is also behind Zhup Zhup, a popular prawn noodle brand at Macpherson road.
Located at New Bahru, they’ve just launched an Chef’s Select Menu with an 8-course dinner set featuring a generous selection of the restaurant’s signature dishes for $100++ per pax!
Interior
The restaurant has an intimate, modern interior with an open kitchen concept where you can see the chefs and wood-fire grill in action.
The Chef’s Select Menu is an 8-course dinner set menu featuring selections of their signature wood-fired seafood, dry-aged fish, and traditional Asian flavours with a twist. The price ranges from $100 – $140 per pax, with a minimum of 2 pax to dine.
Beyond the new Chef’s Select Menu, they also offer à la carte items like Coconut Chicken Broth with Prawns and White Fungus ($26), Monkfish Skewer with Furikake and Nori ($24), and Squid Noodles and Ink ($23), just to name a few.
They also have a wide range of cocktails with interesting names, like Ahjumma’s First Love ($26), Soggy Biscuit ($25), and Suresh’s Curry ($24).
Chef’s Select Menu
Ostra Regal Oysters and Lime Cheek (Fresh/Grilled)
We started off with the Ostra Regal Oysters and Lime Cheek. Guests have the option to enjoy the oysters either fresh or grilled. We had one of each!
The fresh oyster had a clean, crisp finish that made for a refreshing start to the meal.
One of the oysters featured a deliciously balanced garnish and sauce, adding an extra layer of flavour.
Ankimo Mousse and Love Letter
The next course was the Ankimo Mousse and Love Letters, reminiscent of those enjoyed during Chinese New Year celebrations.
This classic snack is reinvented with smooth, creamy Ankimo (monkfish liver) mousse.
Sprinkled with fragrant pink peppercorn salt, each bite was smooth and crisp. An interesting dish for sure!
Prawn Toast and Aioli
This was one of our favourite dishes. The Prawn Toast and Aioli was crispy on the outside with a juicy, flavourful prawn filling inside.
Paired with the creamy aioli, it offered a nice balance of savoury and tangy notes. The toast’s crunch contrasted well with the smooth sauce, and biting into it was so satisfying!
Okra, Togarashi, Bonito Dressing
The okra was lightly cooked and topped off with togarashi spice and bonito dressing. The bitterness of the okra was mellowed by the bonito dressing, which was creamy and savory.
It was an unusual combination, but it surprisingly worked we together.
Octopus, Assam Pedas Hummus, Renkon Chips
This dish featured tender octopus paired with spicy, tangy assam pedas hummus and crispy renkon chips, creating a mix of textures and flavours.
The octopus was well-cooked, slightly smoky from the grill, and the hummus added a nice touch. We also enjoyed the crunch from the renkon chips which helped to balance out the dish!
16 Days Dry-aged Kingfish Loin with Green Goddess (150g)
The 16 Days Dry-aged Kingfish Loin with Green Goddess was one of the standout dishes of the night.
It was served two ways, dry-aged and non-dry-aged, so you can taste the difference between the two preparations.
The fish is dry-aged in-house, giving it a more concentrated umami flavour and firmer texture.
The fish was tender with a clean, buttery flavour, elevated by the herbaceous Green Goddess sauce.
We really enjoyed this dish, and it was interesting to experience dry-aged fish, as dry-aging is a technique rarely applied to seafood.
Jumbo Tiger Prawns, Sakura Vermouth, Burnt Leek Oil
The Jumbo Tiger Prawns were incredibly succulent and juicy.
They were infused with a delicate floral aroma from the sakura vermouth, while the burnt leek oil added a smoky depth that balanced the dish beautifully.
Burnt Toast Ice Cream Sandwich
The Burnt Toast Ice Cream Sandwich offered a surprising twist with its smoky, caramelised notes paired with creamy ice cream.
The contrasting textures of the crunchy wafer and smooth ice cream made it enjoyable.
Chef Select Menu In Singapore
