Liberty Group Hong Kong has expanded to Singapore, launching a new smokehouse restaurant in Marina Bay Financial Centre. Chef Yong Soo Do and Chris Tuthil have taken it upon themselves to elevate the classic barbecue experience with a unique Asian flair.
Contemporary, Industrial Vibes
Liberty Singapore has an industrial chic aesthetic, featuring exposed pipes and wooden design elements that create a sophisticated ambience. You’ll find an arrangement of well-spaced seating, including high tables and cosy booths, designed for both intimacy and comfort during your dining experience!
Liberty Singapore Menu
Featuring a menu that blends Eastern and Western cuisines, expect to savour dishes like the Liberty Burger ($28) and Chicken Risotto ($25). They also offer a Lunch Set Menu, priced at $48++ for a 3-course meal and $58++ for a 4-course meal. Dishes include Liberty Tartarte, Gochujang Salmon Med Bowl and desserts like Ice Cream Sandwich!
Starters & Sides
Shaped like a madeleine, the Corn Bread ($6) contains corn bits that offer a subtle sweetness and a hint of buttery flavour. Served with a Mei Cai (Fermented Cabbage) Cream Cheese dip, there wasn’t an overpowering taste, creating an unexpectedly perfect match with the savoury-sweet corn bread!
The Corn-Rib ($16) has a delightful crunch and is infused with a bold curry flavour that we really enjoyed. Try dipping it in the hollandaise sauce provided to elevate its taste further!
We were pleasantly surprised by the Short Rib Dumpling ($22), a unique twist with a filling of beef brisket and short rib that were well-executed, providing a satisfying bite.
The Brussels Sprouts ($12) were perfectly grilled, and dressed in a Korean-inspired noccham sauce. The sauce brings a light tangy twist to the dish, balancing the sweet and savory notes.
Raw Food
The Hamachi ($28) stood out for its freshness, enhanced by a distinct ponzu flavour that refreshed the palate with each bite.
In contrast, the Salmon Tartare ($23) offered a different kind of refreshment. Dressed in a Thai Chili sauce that provided a spicy kick, it was surprisingly addictive. We highly recommend mixing the tartare with the dressing for the full flavour experience!
Main & Smokehouse Dishes
The Char Siew Pork Belly ($24) has a distinct BBQ flavour and is notably fatty, making it a must-try dish. Its Korean-inspired topping complements the dish well, and the green puree of fresh spring onion and ginger on the side helps cut through the fattiness.
There’s also the Kalbi Short-Rib ($32) that impresses with a slightly charred taste and fall-off-the-bone tender meat, making it a standout dish.
The Prawn Tagliatelle ($32) features perfectly cooked, springy noodles. The sambal bisque sauce, infused with a rich seafood essence and a touch of spice, pairs well with the noodles! You can taste a hint of brininess from the roe.
Apple Pie
The Apple Pie ($14) is a tart with caramelised apples in brown butter. Drizzled in caramel and topped with a scoop of the 5 Spiced Smoked Ice Cream, there was a distinct smoky flavour. However, we wished that the smoke intensity could be milder to enhance the overall flavour of the dessert.
Smokehouse Restaurant in Marina Bay Financial Centre
During the day, this venue serves as a restaurant, but as night falls, it transforms into a bar. The partitions come down, creating the perfect setting for an after-work or weekend drink!
