A new Chongqing-style hotpot restaurant, Lead General Hotpot (帅将军火锅), has opened at Tiong Bahru Plaza!
The brand offers authentic Chongqing flavours based on a 40-year-old recipe originating from Ciqikou, a historic district in Chongqing.
Spacious, Clean Dining Area
Located on the second floor of Tiong Bahru Plaza, the space features a modern, well-lit interior with wide walkways and neatly spaced tables.
The bright, clean layout makes for a comfortable dining experience, especially for groups.
There is also a sauce station ($3.80) with everything you need to customize your own dipping sauce.
Lead General Hotpot Menu
There are 5 soup bases to choose from, ranging from General’s Red Robe Tomato Pot ($5), General’s Inferno Spicy Beef Tallow Pot ($7), and General’s Wild Mushroom Pot ($6).
The ingredient selection includes signature meats like Iberico Pork ($24), Exquisite American Fatty Beef ($20), and Signature Snowflake Wagyu Beef ($40).
There are also seafood options like Blade-sliced White Shrimp ($20), General’s Shrimp Paste ($24), and Scallop ($22).
You can also add on the Seasonal Mixed Veggie Basket ($14) which includes cabbage, leafy greens, sweet corn, and tomato slices.
Hotpot Soup Base
We tried the Four Palace Grid Pot.
The flavours were: Fish Maw & Chicken ($11), Spicy Beef Tallow ($7), Red Robe Tomato ($5), and Pork Tripe and Chicken Broth ($6.50).
All the broths are simmered over hours with spices and premium ingredients.
Of the four, our favourite was the Red Robe Tomato ($5). It’s a tangy, savoury option made with stewed tomatoes and spices.
The Spicy Beef Tallow ($7) features a bold, tongue-numbing mala broth enriched with traditional beef tallow for depth and heat. It’s an aromatic broth simmered using a secret 1980s recipe.
Seafood
We had the General’s Shrimp Paste ($24) and the Golden Defender Pomfret ($33), which was served whole and presented with a dramatic flair – just like how generals might have enjoyed their meals in the past.
The General’s Shrimp Paste ($24) stood out with its bouncy texture and juicy bite. However, the Golden Defender Pomfret ($33), while visually impressive, had a slightly overpowering fishiness that may not appeal to all palates.
Other seafood options include Blade-Sliced White Shrimp ($20), Scallop ($20), Rocket Squid Tube ($12), Crispy Tilapia Fillet ($22), Seafood Platter ($70), and Seafood Masterpiece with Tiger Grouper ($100).
Meat
The meat options are a highlight, featuring tender cuts with bold seasoning.
The Iberico Pork ($24) was succulent with a good balance of fat, and the Honeycomb Beef Tripe ($16) offered a satisfying chew and soaked up the broth flavours nicely.
We also had the Double Pepper Beef ($18), which features thin slices of beef generously coated with red and green chillies. While it looked impressive, most of the spice washed off once dipped into the broth.
The Signature Snowflake Wagyu Beef ($40) was plated like a warrior’s shield and stood out with its rich marbling and buttery texture.
The Sichuan-style Spicy Beef ($16) was coated in chilli flakes, delivering a dry, fiery heat typical of Sichuan cuisine.
They also have other chilli-flake covered meats like the Double Pepper Beef ($18) and Tender Chicken Gizzards ($12).

From now till 31 May 2025, diners can enjoy 50% off all food items (excluding soup bases, snacks, condiments, and beverages), which also means you can enjoy the Signature Snowflake Wagyu Beef for just $20 (U.P. $40).
Hotpot in Tiong Bahru
