IPPUDO is bringing a new flagship to Singapore! Called IPPUDO Beyond, the concept elevates the classic experience with a specially curated menu of sharing plates, appetisers and mains available only at this flagship.

New Ramen Offerings
Their ramen puts a twist on the classic Hakata-style noodles, starting with Daichi Miso ramen (from $20). This base combines four types of miso and tonkotsu for a rich, umami-boosted broth.
The toppings include minced ginger pork, crispy gobo chips and tender roast beef chashu. It’s a massive bowl of noodles so you’re sure to be full after.
Despite the thick soup, it wasn’t too salty. It was moreish and clung well to the thick, chewy noodles, making it super satisfying!
For spice lovers, get the Volcano Miso (from $21). This iteration is finished with Cajun-spiced fried gobo chip and a swirl of chilli garlic oil.
The Uma-Rich Shoyuramen (from $21) is a lighter take but equally flavourful. It’s made with a base of pork, chicken and clams alongside five types of Japanese soy sauce.
Japanese Tapas-Inspired Items
Something special is the expanded menu of non-ramen a la carte dishes, including a Tapas menu.
Items you can look forward to include a Hotate Butter ($11/pc), Barely Miso Tartar ($17) and even Boiled Octopus Carpaccio ($18).
Warm appetisers are also available, like a Crab Omelette ($13) and Garlic Butter Shrimp ($16).
What We Tried
The Red Vegetable Dip ($14) is presented artfully, with three dips: soy milk mayo topped with a blend of olive oil and paprika powder, cranberry cheese, and harissa miso.
The vegetables included tempura red bell pepper, pickled tomatoes and strawberries; crisp and fresh that whet the appetite.
These were surprisingly tasty. Each dip was light but flavourful, especially the harissa miso!
A standout for us was the Pani Puri ($3/pc) filled with avocado and seasoned salmon. This was creamy, refreshing and appetizing, complemented perfectly by the crisp outer shell.
Something we didn’t enjoy as much was the Sea Bream Carpaccio ($16).
There was a fishy aftertaste, despite the refreshing dressing and good mix of textures. Maybe another dish or a second visit might be better.
The Sous Vide Pork Ham ($14) is topped with sushi ginger, horseradish and soy milk mayo. It had a mellow taste despite the horseradish, tasting mostly of the savoury, fatty ham.
We also got to try the Black Pork Charcoal Fritters ($3/pc, min 2 pcs) topped with a mustard onion sauce.
This didn’t stand out to us flavour-wise and could do with stronger seasoning, although the pork itself was tender and juicy.
Mains
For something heartier, try the Grilled Jerk Chicken ($15). This Japanese twist on a Jamaican classic is grilled and infused with a smoky and spicy rub.
Despite it being jerk chicken, it tasted more like miso to us than anything. We liked how juicy the meat was, especially with the generous portion.
There are two other main options available: Pan-Seared Sea Bream ($18) with grains and white miso sauce and Roasted Turnip ($15) with cashew puree.

IPPUDO Beyond presents a rich selection of elevated ramen from its usual classics! The a la carte menu is new and interesting and exceeded our expectations despite being non-ramen too.
