terra Tokyo Italian introduces a new a la carte menu, marking a fresh start for the Michelin-guide restaurant in Tanjong Pagar. The team welcomes new head chef Shozo Sugano with 8 years of training in Italy!

The menu is slim and has less than 20 items, with a focus on seafood and produce! Appetizer options include a Burrata from Puglia with Fruit-tomatoes ($24) and Fresh Fish Tartare of the Day with terra Herb Tea Gelee ($28).
Choose between pastas and mains like Linguine al Pomo-d’Oro ($29) with yellow tomatoes and Linguine alla Nerano ($27), with fried zucchini and mint.
For something heartier, try Char-grilled Bigorre Black Pork with Seasonal Vegetables ($49) and Koji-marinated Karei with Creamy Vinaigrette ($47), infused with the umami of koji.
They also offer a curated wine pairing by in-house sommelier Daisuke Shibuya, with selections starting at $22 per glass depending on the course.
There’s a $45 Three-Course Lunch Set that presents a value-for-money option that includes an appetizer, dessert and main choices like Sauteed Salmon dressed in Mint-crust and Pork Fillet with Seasonal Roasted Vegetable.
What We Tried
The meal began with the Hokkaido Sweet Shrimp Crudo with Passion Fruits and Yoghurt ($28). It was beautifully plated on a clear plate, as if still swimming on our table.
The combination of the tangy passionfruit and creamy yoghurt sauce complemented the plump shrimp, whetting our appetites for the meal.
Something unique was the Smoked Salmon with Creamy Hokkaido Potato ($29). The salmon was topped with a potato espuma, giving a unique light texture.
It tasted a bit like potato chips, with a touch of saltiness from the caviar and hearty flavour of the smoked salmon.
The Chitarra ai Hokkaido Sea Urchin ($38) was reminiscent of a good bowl of creamy udon, with the pasta providing a chewy bite.
We liked the creamy but not cloying gravy, complete with generous pieces of golden Hokkaido uni. There was a nice brininess that elevated the gravy and coated the noodles perfectly!
The highlight of our meal was undoubtedly the Char-grilled A4 Tochigi Wagyu Beef with Fig & Hazelnuts Pesto ($68). It was cooked to a perfect medium rare, complete with a slight crisp from the crust.
With a melt-in-your-mouth texture, it had a clean and beefy flavour. The side of fig and hazelnut pesto elevated every bite with a balance of sweetness to cut through the fattiness.
We only wish the portion size was bigger to savour it more, especially with the piece of potato and grilled asparagus.
The meal concluded with the Rare Cheese Cake with Apricot Sauce ($15). It doesn’t look like a conventional cheesecake, with a rich cheesecake espuma and an apricot sauce sphere.
This was creamy and perfumed by the slight tartness from the apricot. The espuma made it much lighter compared to the classic cheesecake and easier to finish the whole bowl.
If you enjoy chocolate, their Italian Lava Cake with Raspberry Sorbet ($17) is a must-order. The cake was rich, decadent and chocolatey, perfectly paired with the sour raspberry.

On top of the quality food, the service and ambience at terra were top-notch, making this a great place for business meetings and casual dinners alike.
