Soondubu – or Korean soft tofu – seems to be an up and coming Korean food trend in Singapore! Kong Madam is the newest Korean restaurant in Guoco Midtown II offering freshly-made soondubu jjiggae (Korean tofu stew).
Cosy, Hanok-Style Interior

The restaurant is conveniently located in Midtown Modern, right outside a new Bugis MRT exit.
The space has elements of modern Hanok design with full wood furniture and ondol-inspired communal seating spaces.
It’s pretty big and can accommodate groups, including semi-private booths that have a lot of space.

You can see the dedicated kitchen area where they fresh make their tofu daily!
We didn’t get to catch it this time, but you can see the process on their Instagram.
Kong Madam Menu

Their signature offering is soondubu jjiggae, or Korean soft tofu stew.
It’s available in variations like Kimchi ($23.90), Beef ($23.90) and even Cheesy Chewy Noodles ($23.90).
There are also non-meat options including Plain ($21.90) and Seaweed ($21.90).
You can also get combo meals that include charcoal-grilled meats such Pork Ribs ($39.90) and Spicy Chicken ($30.90)
They offer sides to complete the meal, like Fried Shrimp Toast ($14.90), Red Pepper Soy Sauce Boneless Fried Chicken ($27.90/half) and Fried Chilli Pepper Wraps with Pork ($21.90).
Soondubu Jjiggae

We tried two flavours: Seafood ($21.90) and Assorted ($23.90).
Every order comes with sotbap (pot rice), three banchan and a small fried fish, which is a complete meal.

The tofu was the star. It had a tender, fall-apart texture, plus a pleasant soybean fragrance.
It’s not the type of taste you find in store-bought tofu. This was sweet, natural and fresh, making it moreish and enjoyable!

We especially liked the broth. It was thick, flavourful with a seafood-forward umami and punchy; perfect with the rice.
The seafood version had crab, clam and prawn; while the assorted had an addition of beef and pork.
It’s not a lot but enough to bulk up the meal, on top of it already being protein-packed.
We found ourselves stuffed afterwards. It’s more than enough for one person if you’re dining solo!
Charcoal-Grilled LA Beef Short Rib

The Charcoal-Grilled LA Beef Short Rib ($39.90) was well-done too, with an enjoyable smoky fragrance from the grill.
The marinade leaned on the sweet side, providing a caramelised flavour to the tender meat.
We did find the portion feel small for the price. It might be better value to get it as part of their combos!
Sides

To complete the meal, we had the Japchae ($23.90) and Seafood Pancake ($27.90).
The Japchae fell short for us. The noodles were a bit hard and the seasoning was soy-forward. Tasty, but not necessarily authentic.
However, the seafood pancake was well done! It had a crunchy exterior and good amount of ingredients.
