Bedrock Origin returns with the second edition of their Beef & Reef Series this year, featuring produce from Australia! The menu will be available until 31 May 2025.
For those unfamiliar, Beef & Reef is a recurring seasonal menu showcasing different seafood and meat cuts from around the world.
Premium Australian Produce
This edition presents a 5-Course Dinner Menu ($158++ per pax) focused on produce from Australia! A wine pairing menu is available at an additional $88++ per pax.

The menu starts with yuzu-cured Cuttlefish Carpaccio, fennel and fresh pineapple. A disclaimer that the cuttlefish wasn’t from Australia, but this was a refreshing start to the meal.

Next was the Pan-Seared Australian Seabass on a bed of pearl barley and topped with ikura salmon roe. The barley was flavourful and nearly stole the spotlight from the fish!
However, the seabass itself was tender and the crispy skin provided a satisfying contrast in texture.
There are two meat courses: Organic Pressed Lamb Belly and Char-Grilled Pure Beef Tenderloin.

The Lamb Belly is from Warilba, wrapped in soft sour cabbage and braised for three hours till fork tender. The lamb’s distinct flavour was present but not overwhelming, especially when complemented by the accompanying jus.
This was served with celeriac mash and lentils, which made for a hearty meal!

We enjoyed the smokiness and beefiness of the Tasmanian Tenderloin but felt it was tougher than we liked. The cut might have been too thick, and we gave feedback to the team.
The Carpaccio ($38++), Lamb Belly ($48++) and Beef Tenderloin ($98++) are available a la carte as well!

Dessert was a Kalingo 65% Dark Chocolate Mousse with Australian sea salt and olive oil. This was our favourite, with an ice cream-like texture and rich chocolate taste.
The touch of salt and fragrant olive oil help balance the flavours.

Overall, the new menu had a good balance of flavours! It was a fun way to enjoy new meat cuts and selections from Australia.
