You can now get your fix of handcrafted pizzas in the heartlands at Gusta Sourdough! The newly-opened pizzeria is offering a tantalizing selection of artisanal Neo-Neapolitan style pizzas in the heart of Serangoon at affordable prices.
Previously known as Cottontail Creamery, owner-chef Sean Lai used the eatery as an opportunity to research and perfect his pizza-making processes. He prioritises improvement and practice in his craft, taking time to R&D different flavours, flours and fresh ingredients to create the best pizzas possible.
Unique Neo-Neapolitan Style Flavours
At Gusta Sourdough, they use a proprietary pizza dough recipe with a sourdough starter, a special blend of Italian and Japanese flours and Fleur de Sel de Guerande sea salt. The dough is then proofed between 24 to 30 hours to develop its signature flavour. You can choose from three pizza choices: Classic Pizzas, Special Pizzas and Vegan Pizzas.
The Classic Pizzas lineup includes the Calabrese Salami ($22.50), garnished with slices of smoky salami that’s spicy and fragrant. The finishing touch is a homemade garlic maple syrup to contrast the saltiness of the meat, sitting atop a chewy and flavourful crust that holds its shape against the generous toppings. There’s other favourites like the Margherita ($20.50), Hawaiian ($23.50) and Italian Sausage ($24.50). You can taste the premium ingredients they use here, with everything from the homemade tomato sauce, fresh cheeses to the cured meats.
Their Special Pizzas come on a rotational basis and can include interesting combinations like Mala Chicken ($24.50) and Raclette Cheese & Potato ($26.50), which we got to try. The Mala Chicken was a homage to the classic mala xiang guo, with a fragrant mala cream base topped with tender, seasoned minced chicken. The mala flavour was pronounced but not overwhelming and contrasted the creamy cheese in the garnish.
On the other hand, the Raclette Cheese & Potato was indulgent, with thin slices of crunchy potatoes atop a base of savoury Swiss raclette cheese. It was reminiscent of a Swiss cheese fondue, complete with their fluffy pizza crust. There’s a reason why this pizza is a top-seller! If those are not to your taste, there’s also the Prawn & Chilli Crisp ($26.50) and Kale Pesto ($25.50) with basil oil and edible flowers for your choosing.
There are also a selection of Vegan Pizzas like the Mushroom & Truffle Oil ($27.50). With a cream base and topped with porcini salsa, button mushrooms and truffle oil, it’s a crowd favourite. The mushrooms gave a good meatiness to the pizza, and the fragrance of the truffle was present but not overwhelming like the usual truffle offerings.
You can also opt for the Marinara ($18.50) or the spicy Korean-inspired Kimchi ($24.50) which comes with vegan gochujang cream, seaweed and vegan mozzarella. Fun fact: the vegan menu can also be made in non-vegan iterations, so feel free to get creative!
Their side dishes are also worth a shout-out. The Stracciatella & Vine Tomatoes ($18.50) boasts fresh vine tomatoes to compliment the fresh cheese, and the Australian Wagyu Roast Beef ($16.50) topped with chimichurri sauce and horseradish mayo is tender and flavourful.
Despite its humble exterior, Gusta Sourdough Pizza Co. offers a great and inclusive menu that prioritizes improvement, elements with fresh ingredients that are highly worth a try!
