Boeuf Collaborates With Le Matin Patisserie For Limited-Time Set Menu, Including Foie Gras Brioche

When we heard that Boeuf had partnered with Le Matin, we were excited – the combination of specialty beef and French pastry sounded like a sure win. You can now also savour the Four Hands collaboration menu at Boeuf only until 31 October!

Boeuf x Le Matin Menu

The Boeuf x Le Matin Patisserie Sharing Set Menu ($128++) comes with six dishes and can comfortably feed two. Each dish highlights the quality ingredients and culinary skills of Chef Carlos Gan and Chef Al Matin. 

Appetizers

Burratina de Puglia

The set menu presented two appetizers: Burratina de Puglia and Wagyu Steak Tartare. The Burratina was creamy and fresh, contrasted by a tangy balsamic reduction. 

Sitting atop a sourdough-based croissant, the Wagyu Tartare came topped with a herb-infused egg yolk. The tartare was well-seasoned without any gameiness, complemented by the buttery flaky base! 

Filet Mignon Rossini

The star of the night was the Filet Mignon Rossini. It came with an Australian Marble 3 tenderloin and a slab of foie gras, served with brioche feuilletée and a pepper jus. 

This tasted as good as it looked. The tenderloin was cooked to a perfect medium rare; tender and juicy with a clean beefy flavour. When paired with the creamy foie gras and flavourful pepper jus, it was delicious but not too rich! 

Horseradish Sweet Shrimp Tartine

A break from beef is the Horseradish Sweet Shrimp Tartine, featuring a shrimp salad atop a sourdough-based croissant.  

The shrimp were tossed in a herb dressing that, despite its creamy base, was surprisingly light. Each bite was balanced by the sweetness of the shrimp and buttery bread base, proving a welcome contrast to the heavier beef. 

Dessert

You can sample desserts from both restaurants, starting with Le Matin Patisserie’s signature Fromage de Vos Reve. It combines the richness of two French cheeses, Brillat savarin and Reblochon cremeux, with a fluffy sponge. This maybe an acquired taste but had a unique sweet-salty-umami taste profile for a dessert! 

The Moelleux au Chocolat was decadent and fluffy with a Weiss Komele 70% cacao base, and we enjoyed how rich it was.

The Mignardise Box features six ornate pastries – Lemon Myrtle Madeleine, Caramelised Apple Stroopwafel, Ispahan Patede Fruit, Calisson, Chocolate Cookie and Brown Sugar Palmier.
