Fat Belly Hosting Limited-Time Meat Workshops Featuring Wet-Aged & Spirit-Aged Steaks

If you’ve always loved steak but never quite knew which cut to choose, here’s an exciting workshop for you! Fat Belly is hosting Butcher’s Secrets — a series of meat-focused workshops introducing different steak cuts and its techniques. 

What Is The Butcher’s Secrets Workshop?

Butcher’s Secrets is a meat workshop by Fat Belly steakhouse, hosted by their Group Executive Chef Victor Loy. 

The workshops introduce the fundamentals of steak, including the different cuts as well as key preparation methods like dry-aging. 

Look forward to curated, premium meats like grain-fed Angus and Wagyu MS6/7, alongside unique methods like spirit-ageing!

Guests also get to sample the different meats, prepared to the best versions by Chef Loy and his team. 

It’s the perfect activity for steak-loving companions or anyone looking to expand their culinary horizons. 

How Many Workshop Sessions Are There?

There are three themed sessions, with six dates available. 

Each session is limited to an intimate number of guests to ensure an engaging and interactive experience. 

  1. Primary vs Secondary Cuts
    Workshop Dates: 2 May & 9 May 2026
    Price: $78++ per guest
    Workshop focus: Introducing traditional and lesser-known steak cuts, sharing how muscle, fat and butchery influence flavour and texture
  2. Wet-Aged and Dry-Aged Steaks
    Workshop Dates: 16 May & 23 May 2026
    Price: $88++ per guest
    Workshop focus: Comparative tasting between wet-aged and 30 day dry-aged beef cuts like Wagyu MS 8/9 and Denver
  3. Spirit-Aged Steaks
    Workshop Dates: 30 May & 6 June 2026
    Price: $98++ per guest
    Workshop focus: Showcase steaks aged with wine, bourbon and rum, and how aromatics can transform the flavour profile of the meat. Expect cuts such as USDA Prime onglet and Wagyu MS 6/7 rump cap and striploin, aged with labels like La Forge Syrah, Ron Zacapa No.23 and Woodford Reserve Double Oak. 

All workshops are hosted at their sister restaurant, Market Bistro. Reservations are required and can be made on their website
