Say hello to WOKE Ramen, a new ramen restaurant in Changi Airport Terminal 1 that is serving up Singapore’s first wok hei-infused ramen! The menu fuses Japanese ramen and Chinese-style la mian for a unique twist.

To achieve its signature wok hei flavour, the noodles are first flash fried over a hot wok before the soup is added to better retain the heat and char. You can watch the chefs skillfully toss the noodles at the front of the restaurant!
There are two types of broth available: a Chicken Collagen Broth with chicken bones and cartilage, and a Prawn Broth with sea prawn heads.
Those who prefer lighter flavours can opt for the Chicken Chashu Collagen Ramen ($13.90), topped with slices of chicken charsiew and an onsen egg. The wok hei is prominent from the first sip of the broth and compliments the sweetness and umami of the chicken. You can enjoy it spicy, or with toppings such as Prawn Paste Balls ($14.90), Chicken Gyoza ($12.90) and even Chicken Katsu ($12.90).
For an indulgent meal, go for the Seafood Mix Prawn Ramen ($18.90) featuring the Prawn Broth with two tiger prawns, prawn paste balls and scallops. The broth was reminiscent of a spicy prawn noodle soup, with a robust prawn flavour and sweetness from the chicken broth base. Other iterations include Tiger Prawn Ramen ($14.90) and Chicken Chashu Prawn Ramen ($13.90).
There are also a variety of sides you can pair your ramen with, including the WOKE Gyoza ($4.50), Chicken Karaage ($4.50) and Five Spice Beancurd ($3.50). We found that the sides included familiar local flavours, paying homage to homemade comfort foods.
