o/sio Singapore Review: Freshly Made Pasta In Maxwell With Japanese Flair

TLDR: o/sio Singapore is Japanese Chef Shusaku Toba’s Tokyo Italian restaurant, which opened its first outlet outside Japan at 38 Tanjong Pagar Road on 4 November 2026. The menu covers freshly made pasta from $16.80++, pizzas from $12.80++, small plates from $6.80++ and two grilled mains at up to $28.80++.

Chef Shusaku Toba’s sio pasta has been serving fresh pasta at Raffles City since March 2026. Now his larger Tokyo restaurant, o/sio, has opened in Maxwell, adding small plates, pizzas, grilled mains, desserts and a wine list to the pasta.

According to the brand, the Singapore menu mixes dishes from the Tokyo original with ones created for Singapore. Expect familiar Italian dishes like carbonara and vongole alongside combinations such as maple syrup on a four-cheese pizza.

o/sio Singapore is a casual Italian restaurant by Japanese chef Shusaku Toba, centred on freshly made pasta, pizzas and wine. It is the first outlet outside Japan for o/sio, which started in Tokyo’s Marunouchi district.

Chef Toba’s cooking is rooted in Italian dishes, with a Japanese approach to seasoning and balance. In Tokyo, he also runs sio, which has been recognised in the Michelin Guide.

Where is o/sio?

o/sio is at 38 Tanjong Pagar Road, right opposite Maxwell (TE18) MRT station.

How Is o/sio Different From sio Pasta?

sio pasta at Raffles City focuses mainly on pasta for quicker, everyday meals. On the other hand, o/sio has a wider menu with small plates, pizzas, grilled mains, desserts and a wine programme on top of freshly made pasta.

Prices and space differ too. sio pasta’s pastas started from $13.80 when it opened and the Raffles City outlet seats up to 28, while o/sio’s pastas start from $16.80++ and the Tanjong Pagar restaurant seats about 60.

What’s on the o/sio Menu?

What We Tried

Crispy Sweet Shrimp ($12.80++)

These tiny morsels of fried sweet shrimp had a crisp coating with an addictive savoury seasoning. These were appetising and would pair great with drinks.

Snow Crab Genovese ($26.80++)

This pasta was tossed in basil pesto and topped generously with seasoned snow crab. The fresh pesto was aromatic and appetising, complemented by the sweet umami of fresh snow crab.

Our only comment is that our plate of pasta was a tad soft, we would have preferred a more al dente bite. However, the portion size of their pastas are sizable and can be shared between two!

Smoked Truffle Carbonara ($27.80++)

This carbonara is made the traditional way with no cream: only egg, smoked pancetta and Pecorino Romano, finished with black truffle and garlic chips.

The pancetta added a rich saltiness, especially with the earthy truffle. It got a bit too salty for us after toward the end, but we enjoyed the overall robust flavours.

Seafood & Datterini ($16.80++)

A pizza topped with mixed seafood, prawns and baby octopus on Datterini tomatoes, with clam jus, lemon, garlic and chilli.

While we enjoyed the bright, juicy tomatoes and fresh seafood, we found this pizza too watery. Our pizza crust was overdone with parts that were a tad too burnt; we feedbacked this to the team.

Maple Quattro Formaggi ($16.80++)–

A four-cheese pizza with fior di latte, gorgonzola, Grana Padano and mascarpone, finished with maple syrup and black pepper. If you’re a fan of the salty-sweet combo, you’d love this!

Unlike the Seafood & Datterini, this pizza was perfectly done. The crust was crisp and puffy with a pleasant chew, acting as the perfect vessel for the cheese.

What Is the Space Like?

o/sio Singapore seats about 60 and the space is set up for everything from small meals to larger group gatherings. There’s an open kitchen with a pizza oven where you can watch the chefs prepare the pasta fresh – which can get very smokey during service.
