Ki-sho: Kappo-Style Omakase In Newton With Award-Winning Tottori Wagyu

Have you ever heard of Tottori Wagyu? Ki-sho is an 11 seater kappo-style omakase in Newton and is the only restaurant in Singapore offering Tottori Wagyu, an award winning cut of beef! 

Their menu specialises in kappo-style omakase with seasonal produce, inspired by the seasons.

The restaurant is led by Chef Takayama, who was previously appointed the Master Chef at the Japanese Ambassador’s residence in Singapore. 

He has even served celebrities and dignitaries like the Japanese Crown Prince and Prime Minister. 

His dishes are inspired by his childhood favourites, showcasing his creativity and ability to craft dishes with a sensory experience. 

Ki-sho Omakase Menu 

The restaurant only offers omakase sets. 

Lunch is priced at $160++ for a 6-course menu and $280++ for 7 courses, while dinner is $280++ for 7 courses and $360++ for a 9-course experience.

We tried the 7 course lunch set.

On our visit, we were served the Monaka (Foie Gras), Zen Garden Platter, and Chawanmushi

The foie gras was hidden in a peanut-shaped monaka, and was creamy, pairing well with the slight crunch from the wafer shell. 

The chawanmushi had a very smooth texture and was very flavourful, with king crab topping.

The Zen Garden Platter features seasonal items, but our platter included uni with seaweed, chilled corn soup with mentaiko and more! 

The uni with seaweed was our favourite because it was creamy yet refreshing.

The Seasonal Sashimi we had included 5 days aged Kamachi, Hokkaido Yellowtail With Ponzu, and Bluefin Tuna Belly With Cured Egg Yolk

Each slice of sashimi was fresh with a clean, delicate texture that highlighted the freshness of the ingredients used. 

For example, the yellowtail was lightly aburi-ed to give a pleasant crisp on the fatty skin to complement the fatty meat. 

The cured egg yolk paired well with the tuna belly, giving it a touch of creaminess that complemented the soft, buttery texture of the fish. 

The star of the show was undoubtedly the Tottori Wagyu

Tottori Wagyu comes from the Tottori prefecture, where over 85% of the cattle from there are in the topmost two A4 and A5 grades. 

This wagyu brand is known for its high quality, tenderness, and rich umami flavour, which has led to its nationwide recognition. 

It won the top price for meat quality at the National Wagyu Competition in 2017 and the Wagyu Olympics in 1996. 

We watched the chef grill and smoke it over hay. We could taste a slight smokiness that elevated the beefiness of the meat! 

Though it was an additional $30, it’s definitely a must-try. The meat was rich and tender with a good balance between lean and fatty meat. 

However, if you’re not keen on beef or prefer not to top up the additional $30, the default main is the Amadai (tilefish).  This was just as satisfying. 

It had a perfectly crispy skin and soft meat, and went really well with the blistered sweet pepper. 

The Ikura Donabe is the chef’s signature for good reason! 

It was just slightly seasoned so the natural flavours of the ikura and ginger flower really came through. 

This was the perfect finisher to the meal – enough to fill up but not cloying.

The desserts were just as good as the savoury dishes! 

While the hojicha flavour in the Hojicha Financier was on the lighter side, it had a great texture; moist and tender. 

The Matcha Ice Cream, on the other hand, delivered a deep, authentic matcha flavour and was exceptionally smooth, without being cloying.

Both weren’t overly sweet, making it an exceptional dessert to end the meal. 

Omakase In Newton

Our meal at Ki-sho was a memorable one, with its thoughtful presentation and the quality of the dishes. 

We truly enjoyed our meal here and definitely recommend having a meal here for a special occasion or a well-deserved treat!
