The brand has built a cult following in Japan for doing one thing and doing it well: hamburg steak on rice, made fresh, grilled over charcoal, and served the moment it’s done.

Now it’s in Singapore and it’s set up at VivoCity. Here’s what you need to know before you head down.

What Is HIKINIKU To Come?

Hikiniku To Come (挽き肉) is a Japanese dining concept from Tokyo that specialises in hamburg steak, the Japanese-style minced beef patty that’s distinct from a burger. Tender, juicy, and deeply savoury rather than sandwiched between a bun.

Founded in 2020 in Kichijoji, Tokyo by chef and restaurateur Shohei Yamamoto, the brand was built around a single guiding belief: the best hamburg steak is the one eaten at the exact moment it’s prepared. 

Yamamoto brought over 20 years of experience in hamburg steak restaurants to develop Hikiniku To Come, and the concept quickly became one of Japan’s top hamburg steak restaurants.

The brand has since expanded across Asia, with outlets in Taiwan, Hong Kong, Thailand, the Philippines, China, South Korea, and Jakarta. Singapore is its latest stop.

What’s The Restaurant Like Inside?

The Singapore outlet seats 28 in the main dining area, with an additional private dining room that holds 10.

Diners sit at one of three open counters, each arranged around a central grill. The layout means every single seat faces the grill, which is consistent with their Japan locations! 

I’ve visited HIKINIKU To Come in Kyoto and have to say the ambience is similar. The Singapore space is minimal and more industrial, but retains the same relaxed, almost immersive view into the cooking.

What Should I Order At HIKINIKU To Come? 

There is exactly one item on the menu: a signature set meal at $27.90++.

That set includes three hamburg steak patties, all made from 100% Japanese beef, served one at a time on rice. 

The brand is dedicated to freshness, with everything done in-house. Every patty is made from freshly ground beef, hand-shaped before it’s grilled over charcoal to the perfect doneness. 

Each patty arrives at its own pace, and each one is meant to be eaten differently.

Here’s how it works:

First patty is meant to be enjoyed as is without condiments. The idea is to experience the full flavour of the beef and the aroma of the binchotan charcoal, while the patty sits on the rice and lets its juices seep in.

Second patty can be enjoyed with grated radish and a drizzle of their house-made ponzu vinegar. The acidity and freshness of the radish cut through the richness of the beef, giving a lighter and more balanced bite of meat.

Third patty can be enjoyed with egg; be it dipped in beaten egg yolk, or mix egg with soy sauce into the rice to create a version of tamago kake gohan (TKG). It’s heavier and more indulgent, and a solid way to round off the meal.

They also provide other condiments like salt, oil-marinated green chilis and Japanese pepper sauce to keep things interesting!

I found the quality and taste of the patties to be almost the same as the Kyoto outlet as well! 

Every patty is incredibly juicy, tender with an indulgent beefiness that isn’t too overbearing; pairing perfectly with their rice to catch the drippings. 

I could comfortably finish three patties, making it a super satisfying meal. They also offer unlimited rice refills for those looking for more bulk!

Is HIKINIKU To Come Worth It?

Yes, HIKINIKU To Come is worth it. To be candid, it’s not cheap for a meal. But the format is designed as an experience, with quality meat that’s prepared fresh; alongside unique ways to change the flavours. It’s worth trying at least once!
