The Chef Andy Fung residency at Golden Peony is a two-week guest chef programme at Conrad Singapore Marina Bay, running from 2 to 15 November 2026. Titled Cantonese Craft, with a Thai Accent, it brings the Bangkok-based chef’s dishes to Singapore for lunch and dinner.

Chef Fung is a Hong Kong native with close to four decades in Chinese kitchens across Hong Kong, China, the Philippines and Thailand. He has led the kitchen at Liu, Conrad Bangkok’s Cantonese restaurant, for more than eight years.

His cooking stays rooted in classical Cantonese technique, with Thai ingredients brought in selectively for brightness, fragrance and contrast.

Chef Fung’s dishes are available à la carte from $18++, or in four-, five- and six-course set menus from $88++. A vegetarian menu is also available.

DessertThai Mango Sticky Rice, Egg Tart with Bird’s Nest
*Four-Hands Special
Sweet Thai mango, three colour sticky rice with coconut cream

Usual item: Classic Cantonese Walnut Sweet Soup

The meal started off strong with the Drunken Prawn, perfectly bouncy and saturated with the sweet, complex flavours of the aged vinegar.

Chef Andy’s Thai flair comes through in the Spicy Pomelo Salad, which tasted like a classic papaya salad with the citrus notes from the pomelo.

My favourite course was the Roasted Duck, which is a Four-hands special dish. The duck had a unique charcoal-coloured skin from the wood smoke.

It was tender, smoky and not gamey at all, with the rich truffle barbecue sauce providing a potent kick of truffle flavour.

The Thai influence also comes through in the Thai Mango Sticky Rice, expertly prepared with sweet coconut notes and a perfectly ripe mango. We wish this was a permanent item!

Chef Ku’s expertise shines in the Matsutake Mushroom Soup with de-boned black chicken and sea cucumber, and the buttery Snow Fish.
