Appetisers
The meal began with Burratina & Roasted Pumpkin ($28), a roasted pumpkin purée and burratina with Korean chilli oil, basil oil, and pickled red onion.
This was light, sweet and creamy, pairing perfectly with the side of toasted sourdough. It tasted healthy but flavourful; an accurate reflection of their menu.
This was the same for the Salmon, Tuna & Hamachi Crudo ($32). The fish was buttery and clean, infused with a zesty sauce.
Mains
We tried three of their signature proteins:
- Herb Confit Chicken Leg ($32). Served with artichoke purée, crushed pistachio, and jus gras
- Patagonian Toothfish ($46). Chilean seabass with roasted cauliflower purée, clam-kelp broth, sweet corn salsa, and olive oil
- Grass-Fed Ribeye ($42). Served medium rare with grilled broccolini, roasted whole garlic, veal jus
The Toothfish stood out as our favourite for its intensely buttery, melt-in-your-mouth texture.
The flavour was delicate, a bit like cod, and complemented by the fresh corn salsa.
We did find the Chicken a bit dry, but liked how the Ribeye was perfectly done. It was especially good with the roast garlic!
The taste profile overall is clean and minimally seasoned, focusing on the natural flavours of the ingredients.
This philosophy is also clear in the accompaniments – artichoke puree, cherry tomatoes, yuca – that provide the needed fibre and minerals to balance every dish.
If you’re someone who likes heavier flavours, you might find the food underseasoned, but it makes for a nourishing meal.
Desserts
An unexpected highlight was the dessert. The Valrhona Cloud Mousse ($22) was finished tableside with sea salt, homemade almond granola and a drizzle of high polyphenol olive oil from Italy.
The mousse was silky with a rich cocoa from the dark chocolate, and the olive oil added a pleasant fruity finish.
The Soy Milk Panna Cotta ($18) was topped with a black sesame crumble and date syrup that complemented the light and silky pudding.
Drinks
On drinks, Foura runs single-origin coffee across espresso, filter, and batch brew, plus ceremonial-grade matcha.
