From 10 October to 30 November 2025, The Courtyard at The Fullerton Hotel invites you to experience a taste of Fall with its collaboration with award-winning guest chef Makoto Arami from AMI Patisserie.
Afternoon Tea in Singapore
The autumn-inspired afternoon tea menu, curated by Chef Makoto, blends European and Japanese elements, offering a selection of savoury and sweet bites.
It begins with a bite-sized Sansho Miso Taki Nasu Madeleine that’s packed with flavour, with a distinct smokiness from the grilled eggplant.
Items like a Burrata Cheese and Parma Ham Sando, Smoked Salmon Tarte and the Tomato Tartelette then follow it. Don’t look down on the Tomato Tartelette, it’s one of our favourites and we wish there was more of it!
The AMI Signature Caviar Choux is also something to look forward to, filled with Japanese-style egg mayo and topped with Nomad caviar.
Instead of the usual traditional scones, Chef Makoto presents the Kinako & Matcha Tropezienne with Yuzu Jam. It’s a Japanese-inspired take on the bread course, with the nuttiness of kinako and brightness of yuzu coming together with matcha.
For sweets, you have classics like the Mont Blanc and a Black Forest choux cream puff, alongside a Caramel Banana Mousse and our personal favourite, the Strawberry Pistachio Tarte.
It concludes with a Mango Coconut Rice Pudding featuring mango and Passion Fruit Sauce, crafted with Japanese rice for a distinct and unique texture.
Along with the AKI Afternoon Tea set is a specially crafted mocktail. The Yuzu Blossom comes in a gorgeous shade of purple, made using butterfly pea flower tea, cherry blossom tea, soda water, honey and yuzu.

The AKI Afternoon Tea is priced at $68++ per adult, $34++ per child (6 to 11 years old) and is inclusive of a complimentary Yuzu Blossom mocktail and a serving of coffee or tea.
Happening from 10 October to 30 November 2025, Mon to Thurs, 2:30pm to 5:30pm and Fri to Sun, first seating from 12pm to 2:30pm and second seating from 3:30pm to 6pm.
