In celebration of Goodwood Park Hotel’s 125th Anniversary, Min Jiang presents a specially curated a la carte menu titled ‘Memories of Shanghai’. It will be available from September 1 to October 31, 2025, for lunch and dinner daily.
Min Jiang Memories of Shanghai

The dishes are created based on Master Chef Chan Hwan Kee’s recent trip to Shanghai. While the dishes are still rooted in tradition, Chef Chan has added his own inventive flair to them, so it’s almost like a modern interpretation of Shanghai dishes.
They are a total of six dishes perfect for communal dining.
- Fresh Bean Curd Skin with Scallions
- Marinated Shrimp with Rice Wine-Preserved Plum
- Crab Roe Bisque with Crabmeat and Potato
- Stewed Bee Hoon with Lobster and Crispy Conpoy
- Shanghainese Smoked Pomfret Fish
- Sizzling Iberico Pork Belly in Claypot
One of our favourites was the Fresh Bean Curd Skin with Scallions ($16++).
While the dish might not sound the most appealing, this was one of our favourites from the menu. It features fresh soft bean curd that has been soaked in a brine of scallion oil, ginger, peppercorn, spring onion and chilli. It’s then placed on top of a bed of crunchy French beans, creating a multitextured masterpiece. Very flavourful!
Crab roe is a must when it comes to Shanghainese food, but the Crab Roe Bisque with Crabmeat and Potato ($28++) isn’t your typical crab roe dish. Inside it are potatoes done two ways, diced for a nice bite now and then, and mashed for a velvety texture.
