Joyden Canton Kitchen Launches Chinese New Year Menu, Has Crispy Yam Yusheng And Whole Braised Duck

The Chinese New Year season is soon coming upon us and you can gear up for a selection of both classic and unique menu items! Joyden Canton Kitchen is one of them, with a lineup of reunion set menus for the Year of the Rabbit 2023. 

Joyden Canton Kitchen CNY Set Menu

For the coming year, Joyden Canton Kitchen is offering two set menus: six-course (from $288) to an eight-course (from $688), highlighting the flavours of duck and yam. 

The menu starts with their Crispy Yam with Salmon Prosperity ‘Yu Sheng’ ($68) which comes with salmon slices and crispy yam strips. You can also opt for the more luxurious Crispy Yam with Salmon and Abalone Prosperity ‘Yu Sheng’ ($78).

The stars of the menu are the duck dishes, especially the Traditional Braised Eight Treasure Duck ($108). The whole duck is stuffed with ingredients like water chestnut, shiitake mushroom and before being braised in a savoury gravy for two and a half hours. The meat was fall apart tender and the gravy paired well with white rice. 

There’s also the Traditional Crispy Szechuan Fragrant Duck ($76) featuring a deep-fried duck with homemade sambal and kumquat. The meat is marinated and then steamed for three hours to achieve its signature crispy skin, which went perfectly with the sambal and pickled green papaya. 

Yam is another highlight ingredient this year. The Crispy Homemade Yam Ring with Pork Loin & Fresh Scallops in XO Sauce ($48) is Joyden Canton Kitchen’s take on the nostalgic dish – complete with pork loin, scallops, asparagus and more. With a crunchy outside and fluffy yam texture, the yam ring is sure to please all ages. 

The Steamed Fragrant Glutinous Rice with Yam and Chinese Sausage Topped with Crispy Kai Lan ($48) is packed with chicken, Chinese sausage and yam cubes. This dish was comforting with familiar but elevated flavours, especially the fried Kai Lan strips that added a pleasant crunch. 

One highlight is Joyden Canton Kitchen’s seasonal Hong Guan Yin tea ($4.20 per pax, min 2 pax). The tea was crisp but very fragrant, pairing well with the heavier dishes. This tea goes through a fermentation process that turns it into a golden red colour with subtle honey flavours. 

Other dishes you can enjoy from Joyden Canton Kitchen’s menu include Handmade Seafood Beancurd with Slow Braised Shanghai Baby Cabbage ($20) and desserts like Sago and Pomelo in Mango Puree ($6) or Traditional Homemade Yam Puree with Pumpkin and Gingko Nuts ($7).
