New year, new menu items! Hop into the Year of the Rabbit with Crystal Jade’s Chinese New Year menu offerings. Put together by Group Executive Chef Martin Foo and his stellar team of chefs, there are both limited-time dishes for dine-in, as well as convenient takeaway specialties for all your Lunar New Year 2023 needs.
Golden Harvest Sea Cucumber Yusheng
What’s CNY without Yusheng!
Featuring a ‘Shunde’-style yusheng, the light and refreshing Golden Harvest Sea Cucumber Yusheng ($208 for large, $138 for small) features crunchy frisee lettuce, cucumber, ice plant, and kaffir lime leaves alongside jellyfish head, pomelo, dried persimmon to name a few. Instead of the usual raw fish slices, the yusheng features slices of Australian sea cucumber that are braised for several hours in a seasoned broth. It’s a beautiful mix of textures, and aromatic while being light on the palette.
Crystal Jade Palace
Start the meal with a warm, comforting bowl of Poached Chinese Cabbage with Superior’s Bird Nest ($88 per person), which had clean, sweet flavours along with dim sum items like Steamed Siew Mai with Abalone and Black Moss or the Steamed Crab Meat and Mustard Dumpling.
Dig into a tantalizing Poached Wild Soon Hock in Pickled Tomato Soup ($16 per 100g) which uses live soon hock cooked in a tomato-based soup with pickled mustard leaves.
A fun dish for the whole family is the Braised Abalone with Sea Cucumber, Fish Maw & Conpoy on Crispy Hor Fun ($68) which features a deep-fried disc of flat rice noodle sheets topped with lots of seafood goodness. The crispy texture of hor fun stands out despite being soaked in gravy.
End the meal with the Crispy Ginger with Orange Peel Nian Gao ($8.80 for 4 pcs) which are deep-fried bite-sized balls of nian gao studded with orange peel coated in a chopped ginger-flecked batter.

Crystal Jade Golden Palace
At the golden palace outlet located in Paragon, they have a mix of Teochew specialties and premium Cantonese fare, such as the Steamed Boston Lobster with Puning Bean Sauce, Vermicelli & Garlic.
There are also items like Pan-fried Pomfret with Radish & Yellow Bean in Teochew style Broth, Crispy Spring Chicken marinated with Fermented Bean Curd, and an Eight Treasure Colourful Vegetable Medley.

Crystal Jade Hong Kong Kitchen, La Mian Xiao Long Bao, Jiang Nan
Apart from the fine dining outlets, there are also festive items at the other outlets.
Featuring items like a Reunion Yusheng with Abalone with Black Moss, Double-boiled Chinese Almond and Red Dates with Preserved Apricot & more, it’s bound to be a bountiful year after indulging in these dishes.
There’s also a cordyceps-infused Dang Gui Crispy Salted Chicken ($19.80 for half, $36.80 for whole) that reminded us of herbal chicken, with the added satisfaction of biting into the crispy skin with each bite.
There will be set menus priced between $398 and $538 for five, and between $638 to $988 for eight-to-ten persons.

Chinese New Year dining at Crystal Jade restaurants will commence from 4 Jan 2023 (select outlets will be closed on 22 Jan 2023) and set menus for up to ten persons are available. Reservations can be made at outlets or online via https://inline.app/booking/cj.
