Every year, Bedrock Bar & Grill has a World Meat Series. Previously, it showcased cuts like Miyazaki Wagyu and Mangalica Pork, also known as the Kobe Beef of Pork, just to name a few.
For the first edition of the 2025 World Meat Series, they’re bringing diners a unique experience – Reindeer meat.
Reindeer Meat in Singapore
A rare treat from the Arctic, Bedrock Bar & Grill offers a 5-course tasting menu priced at $148++ per person, which features several cuts from reindeer ethically and organically raised in Lapin Liha, Finland.
Lapin Liha is a boutique meat producer based in Rovaniemi, Finland. Established in 1989, it aims to craft the finest reindeer and game products.
Known for being lean, tender, and easy to digest, high-quality game meat is actually a natural and wholesome source of protein, making it a healthy choice when enjoyed in moderation.
Bedrock Bar & Grill World Meat Series 2025
The five-course tasting menu starts off with a Reindeer Carpaccio, featuring delicate tenderloin slices that melt in the mouth. It’s paired with candied walnuts and Italian Gorgonzola blue cheese, together with pickled shallots and fresh rocket cress.
Next is the Smoked Reindeer Tartare, which is made with hot-smoked minced tenderloin, quince jam, and gooseberries. It’s served with a micro herb salad and crisp house-made croutons, which add a nice crunch to the overall dish.
The Braised Reindeer Shank is first grilled over Bedrock’s signature applewood fire. Then, it’s braised in a stock of mirepoix, garlic, thyme, bay leaf, tomato paste, and red wine. It’s served with smoked mashed potatoes and a celery salsa.
Next is the Reindeer Striploin, simply seasoned with salt and pepper and pan-seared to perfection. There’s a side of glazed baby carrots, a celeriac puree along with a drizzle of tangy lingonberry sauce, chive oil and tendril cress.
Ending the reindeer course meal is a Blueberry Cream Fraiche Tart.
For those who want to try reindeer meat but do not wish to commit to the whole course, the Braised Reindeer Shank and Reindeer Striploin are also available a la carte. For those who wish to give the course meal a try, do note that one day advance reservation is required.
