From 8 May to 31 July 2024, Bedrock Bar & Grill is back with the second edition of their 2024 World Meat Series, shining a spotlight on Mangalica pork from Hungary, dubbed the “Kobe beef of pork”.
If you’ve followed us for some time, you’d know that the World Meat series is a quarterly showcase of premium and lesser-known meats from around the world. Some of the previously showcased meats to name a few were the Miyazaki Wagyu by Arita Ranch and 2GR Australian Wagyu by Hancock Agriculture.
Introducing Mangalica Pork from Mangalic Heaven
Mangalica Pork from Mangalica Heaven is the first and only specialized butchery in Hungary offering origin-certified Mangalica meat products.
The highly marbled pork is rich in omega-3 fatty acids, vitamin D, and natural antioxidants – thanks to a natural diet of forage and barley. The breeding program ensures no added growth hormones, antibiotics, antibacterial chemicals, or even pesticides in the animals’ feed. Interesting fact, the Mangalica almost went extinct back in the second half of the 20th century but was saved and now there are around 50,000 pigs.
For this edition of the World Meat Series, diners get to enjoy a 5-course Dinner Tasting Menu ($138++/pax) alongside a 4-wine Pairing for a supplementary fee of $78++ per person.
The dinner begins with a Charcuterie of Mangalica Pork, showcasing various cuts prepared in-house. You’ll find 60-day salt-cured back fat served on sourdough, along with items like a house-made ham crafted from pork trimmings and pink salt.
Next is a Pork Belly, slow-roasted on Bedrock’s signature applewood-fired grill, served with a candied apple sauce. Super indulgent and delicious!
Following that is the Pork Goulash, featuring a house-made spaetzle sauteed with garlic, butter, and lime zest, and a flavourful paprika cream. This particular dish is also available as an a la carte special for $48 if you intend to just dine at Bedrock.
We’re ending the savoury course with the Woodfire Grilled Pork Collar (120g). The meat is seasoned with salt, pepper, rosemary, and garlic confit oil – first sous vide before being grilled over applewood fire. The smokiness and meatiness are nicely balanced out with tangy sundried tomatoes, alongside glazed shallots and golden brown roasted potatoes.
It’s always nice to end with dessert, and for this series, Bedrock presents a Cherry & Cream Cheese Strudel. Think layers of almond filo pastry paired with a luscious blend of ricotta cheese, cream cheese, and brandied cherries.
The 5-Course Dinner Tasting menu is available from 9 May to 31 July 2024, from Sunday to Thursday, for dine-in from 6pm to 8:30pm. Do note that a one-day advance reservation is required.
