Pura Brasa: Spanish Restaurant in Tanjong Pagar with Charcoal Grilled Meats and Injeolmi Iceballs

Pura Brasa is a humble but bustling Spanish restaurant in Guoco Tower, popular for its menu of hearty Spanish cuisine. They’ve added a new selection of menu items that use the charcoal-fuelled Josper oven brought over from Spain! 

These will be available from the end of May 2024, but we got the opportunity to try them in advance. 

Pura Brasa Menu

Aside from the new additions, Pura Brasa offers a good mix of mains and sharing items . The mains include dishes such as tender meats cooked in the Josper Charcoal Oven, like the Josper grilled Wagyu thin skirt ($56) and the slow-cooked yellow French chicken breast served with Mediterranean vinaigrette ($28).

No Spanish meal is complete without tapas and their selection is varied, including half a portion of Spanish pork ribs ($29), prawn casserole sautéed with garlic, chilli peppers, and olive oil ($28), and grilled chicken wings with straw potatoes ($18).

Bellota Jamón Ham 

Pura Brasa- Bellota Jamón Ham

We started with the Hand-Cut 72-Month-Aged 100% Acorn Fed Bellota Jamón Ham ($65/60g, $35/30g), which was expertly hand-sliced into thin, even pieces. Despite being thinly sliced, it boasted a rich and complex flavour, with fats that melted quickly in your mouth.

Josper-Grilled House Smoked Wild Tasmanian Abalone

The Josper-Grilled House Smoked Wild Tasmanian Abalone ($48) was smokey and succulent, with an aroma from the charcoal that imparted a good char while remaining juicy and tender within. It was a perfect bite-sized portion for us to enjoy!

Josper-Grilled Crispy Pork Belly with Porcini Mushroom Sauce

The Josper-Grilled Crispy Pork Belly with Porcini Mushroom Sauce ($29) was sous-vide for 14 hours, making it tender, juicy, and practically melt-in-your-mouth. The Skin was crispy and crunchy which added an enjoyable contrast in texture. The dish was topped with a sauce made from porcini mushrooms and pork jus, enhancing the rich and savoury flavours.

Pancetta and Kale Pizza with Sour Cream

The Pancetta and Kale Pizza with Sour Cream ($33) sauce had a creamy and tangy sour cream blend, which complemented the toppings well. The kale on top was mild, without a bitter aftertaste, while the pancetta added a nice saltiness to cut through the richness.

Josper-Grilled Red Snapper with Panaderas Patatas and Umami Crab Sauce 

The Josper-Grilled Red Snapper with  Panaderas Patatas and Umami Crab Sauce ($34) was sweet and flavorful on its own, with a crisp skin and tender meat. 

While we enjoyed the dish, we found that the crab sauce could have been more prominent, and it might be on the saltier side for some. Despite this, we still enjoyed the dish. 

30 Days Dry-Aged Australian Wagyu Ribeye

The 30-Days Dry-Aged Australian Wagyu Ribeye ($33) featured a generous portion of Wagyu cooked to an appetising medium rare. It tasted as good as it looked – tender and juicy with a rich beefy flavour from their in-house ageing process. The meat had an excellent meat-to-fat ratio, providing a clean and satisfying finish!

Assorted Sobok Ice Balls with Chocolate Comb 

Sobok is a popular ice cream store in Korea famous for its modern takes on traditional Korean desserts! Pura Brasa has partnered with them to be the only one in Singapore offering their selection here. 

The Assorted Sobok Iceballs with Chocolate Combs ($16) is one of those items! Each iceball featured a rice cake centre, offering a pleasant contrast between chewiness and the creaminess of the ice cream. Of the three flavours – injeolmi, sweet potato and black sesame – we found the injeolmi the most memorable! 

Surprisingly, the chocolate comb was not overly sweet, with a distinct crunch and chocolate taste. However, we felt that it didn’t add much to the overall dish, despite being a rather interesting element. 

Spanish Cuisine in Tanjong Pagar 

Pura Brasa provides a good balance of hearty Spanish dishes and a welcoming ambience, making it a cosy setting for gatherings with friends. Good as a spot for Friday night dinners and celebrations!
