Dew by Whitegrass: New Dining Concept From Michelin-Starred Restaurant With Sharing Plates & Sake Pairing

Michelin-starred restaurant Whitegrass has introduced a new dining concept: Dew by Whitegrass in CHIJMES. This restaurant offers a casual but elevated dining experience focused on Euporean-fusion sharing plates and a curated sake selection of over 65 varieties.

The restaurant is small but well-spaced, finished with mood lighting and simple furniture. It exudes a quiet yet intimate atmosphere which would be perfect for a night of drinks with friends. 

There’s an open bar and kitchen, so you can peek to see the chefs work their magic! 

Dew by Whitegrass Menu

Unlike the structured course menu of their counterpart, the menu here offers a la carte and set menu options. There’s a Lunch Set Menu with items like Iberico Don ($30) and the soupy somen Swimming Unagi ($28), each coming with otoshi (appetizer) and salad of the day. 

Their main food menu focuses on small sharing plates to pair with drinks. This includes Molten Cheese ($28); brie with housemade grapefruit jam on crostini and 1000 Levers Liver ($14), a mille-fueille pastry with chicken liver mousse. 

For something more substantial, there’s the IGA Wagyu Don ($30) with A4 ribeye and Spanish Black Hog ($28) which features braised iberico pork. 

Their specialty is sake, with 40 Dew-exclusive options. They also have shochu, gin and house cocktails like the Sweet Potato Shochu Highball and Kohi Tonic.

Bites

For starters, there was the Pink Ocean ($22), a combination of Chef Smoked Salmon and Hamachi carpaccio. The salmon was a highlight, with a strong savoury smokey flavour that was highlights by the accompanying garlic mayo. In comparison, the hamachi was light and refreshing. 

The Cheese Choux Puffs ($10) were light but had a strong umami, making them quite addictive. 

Another stand-out dish was the Proscuitto on Brioche ($15) which featured their housemade sesame brioche. The sesame fragrance complimented the salty prosciutto and creamy cheese perfectly. 

A dish that took us by surprise was Unagi Meet Tamago ($18). The ingredients were simple but well-executed, with the crisp unagi and creamy egg providing a satisfying bite! 

Fried Items

The best dishes to go with drinks are fried dishes, and Dew’s selection include the Potato Bombs ($10). These crispy morsels are available in original, anchovy and curry flavours; with a crunchy exterior and soft inside. Our recommendation is the anchovy, although we wish the curry had more flavour. 

There’s also Hokkaido Pearls ($26), fried Hokkaido scallop with tartar and a slice of raw Japanese mushroom. Each bite was juicy and fresh, complimented by the creaminess of the tartar. 

Rice, Pasta & Meat

The Yuzu Kosho Seaweed Pasta ($20) features a cream sauce with tagliatelle. We thoroughly enjoyed the sauce, which was balanced with spiciness of the pepper and umami from the seaweed. 

A star dish was the “R” IGA Ribeye ($58). Compared to the typical fatty steak, this cut was clean and almost refreshing. It still retained the enjoyable beefy flavour without being overwhelming, further contrasted by the punchiness of the accompanying mustard. 

For something simple, the Shiok! Oji Chicken ($22) is a good choice. It featured a shio koji-marinated chicken atop seaweed and rice. This was well-executed, from the tender chicken to the fragrant rice! 

Desserts

There are only two dessert options – the “D” Little Kiss Cheesecake ($12) and Nara Sake Kasu ($8) – but we think both are worth the order. 

The cheesecake was one of the most memorable we’ve had so far. It was creamy and not too sweet, with the red wine sauce providing a slight tang to the overall dish. 

The Nara Sake Kasu is an ice cream made from sake lees, the by-product of sake. It had a unique fermented but sweet flavour, with a notable fragrance of rice! 

Sake & Cocktails

If you’re a sake lover, you’ll enjoy the selection they have here. We got to try the Sweet Potato Shochu High Ball made with DAIYAME IMO Shochu from Hamada Distillery. This was easy to drink and is made with 0 sugar, making it less burdensome. 

For something lighter, there’s the Whitegrass Little Tokyo, a blend of sake, aperol and yuzushu (yuzu sake). It’s good for those who like sweet cocktails with no alcohol aftertaste! 

Sake Pairing In Chijmes

With its approachable ambiance and plethora of sake and bar bites, Dew by Whitegrass is a nice addition to the area of City Hall, perfect for casual drinks and a night out!
