Crystal Jade Pavilion Opens At Vivocity, New Spot For Family Gatherings & Business Luncheons

Crystal Jade Pavilion is the restaurant group’s third fine-dining brand, coming after Crystal Jade Palace in Takashimaya and Crystal Jade Golden Palace in Paragon. With a picturesque view of the waterway and Sentosa Island, the new elegant and contemporary space is perfect for hosting business luncheons and family gatherings.

The new restaurant boasts an inspired menu that not only has modern interpretations of classic Chinese dishes but traditional ones as well – all fronted by Group Executive Chef Martin Foo and his team of chefs.

Here are some menu items you can look forward to at the new Crystal Jade Pavilion:

Some cold starters include the Chilled Tomato with Roselle Plum ($10.90 for 8pcs) which are addictive roselle and sour plum-macerated cherry tomatoes that burst immediately upon the first bite. There’s also Chilled Fresh Lily Bulb and Cordyceps Flower with King Oyster Mushroom ($13.80) in a Sichuan Mala dressing, alongside a Chilled Homemade Tofu with Scallop, Bonito Flakes, and Perilla Leaf ($18.80).

For hot appetisers, the Deep-fried Mushroom and Corn with Salted Egg Yolk ($12.80) is bound to satisfy with perfectly moreish salted egg yolk batter-coated mushroom clusters that come with corn kernels as well! Other options also include Deep-fried Szechuan Diced Chicken and Crispy Bi Feng Tang Eggplant.

One highlight not to be missed is the Pan-fried Sliced Duck and Foie Gras with Crepe ($18.80 per person, min 2 pax) which features a meaty slice of crispy-skin roast duck with pan-fried foie gras and fried beancurd skin wrapped in a homemade crepe with assorted crunchy vegetables.

For soups, the Poached Scotland Bamboo Surf Clam in Prawn Broth ($26.80 per person) features a red-tinged soup made using prawn shells, poured into a bowl filled with fresh bamboo clam pieces and other condiments like ginger, black fungus, coriander, and deep-fried dough fritters.

Crystal Jade Pavilion also has lots of live seafood options, and one of the recommended items is the Pan-fried Threadfin with Supreme Soya Sauce ($58.80, 600-700g). The fish is first deep-fried before being simmered in a superior soy sauce – the result is a crispy textured fish coated in a shiny dark sauce!

Perfect with some rice is the Fresh Chinese Yam with Sea Cucumber in Fragrant Spicy Sauce served in Claypot ($42.80) which has crunchy Chinese yam batons paired with Australian sea cucumber.

For greens, there’s a Poached Choy Sum with Black Fungus and Cordyceps Flower in Chinese Ginger Wine ($24.80).

Among the multiple noodles and rice options such as Angel Hair Pasta with Seafood & Truffle Sauce, Japanese Thin Udon Soup with Live Prawn and Seafood Fried Rice with Black Pepper and Foie Gras, the Braised Duo Vermicelli with Pearl Abalone & Pork Belly in Abalone Sauce ($33.80) stood out with its mix of bee hoon and tang hoon paired with pork belly and abalone sauce with slices of pearl abalone.

For dessert, pick from items such as Steamed Green Tea Lava Custard Buns, Double-boiled Hashima with Lotus Seed, or Cheng Tng Sweet Soup with Six Treasures and Golden Luo Han Guo in Whole Fresh Coconut ($13.80 per person) that’s brimming with quality ingredients such as peach gum, white fungus, ginkgo, and dried longans.
