Crystal Jade Palace And Crystal Jade Golden Palace Launch Refreshed Menus

Led by Group Executive Chef Martin Food, the team of chefs at both Crystal Jade Palace at Takashimaya Shopping Centre and Crystal Jade Golden Palace at Paragon have crafted refreshed menus with new tantalizing additions and options for an impeccable dining experience for all occasions.

Highlights From Crystal Jade Palace

The flagship fine-dining outlet is known for its repertoire of traditional and inventive Cantonese and Chinese dishes. Here are some of the new dishes you can find:

Indulge in a trinity of superior bird’s nest, fresh crab roe and jellyfish with the dry-tossed Superior Bird’s Nest with Fresh Crab Roe in Jinhua Ham Soup ($88 per pax). To enjoy this dish, diners are encouraged to have mouthfuls of the bird’s nest dish between sips of soup.

The Braised Whole Thick Fish Maw ($78 per pax) comes with a “show” when it’s served. With the chef stir-frying it (right in front of your table!) in spring onions for that extra burst of flavour, you can expect a fragrant medley of flavours when biting into that fork-tender generous hunk of fish maw.

For meat lovers, you can opt for the Sauteed Spare Ribs with Aged Black Vinegar and Lychee ($32). While the sauce was tangy-sweet and delicious, we really loved the combination of the sweet lychee with the deep-fried ginger shavings on the side.

Balance out the meal with the Poached Cabbage in Porridge Water with Conpoy & Garlic ($26) which is a soothing, light vegetable option made from the liquid of cooked porridge. The Tianjin cabbage is naturally sweet, and you’ll find a generous amount of garlic in the dish.

Simple indulgence comes in the form of Mee Pok tossed with XO Sauce and Crispy Pork Lardon served with Crackling Pork Belly ($28). You can expect thick cuts of juicy pork belly that go well with the piquant homemade XO sauce-covered noodles.

Finish the meal on a sweet note with the Chilled Beancurd with Ginger Osmanthus Syrup ($8.80) that features smooth homemade soymilk beancurd served with a molasses-like syrup tinged with ginger and osmanthus flower. There’s also the Crispy Gula Melaka Lava Mochi Ball ($10.80 for 4 pcs) which has a chewy mochi exterior and a molten caramelly gula melaka centre.

Highlights From Crystal Jade Golden Palace

Over at Crystal Jade Golden Palace, the Teochew Four Delights ($58) has been given an update with a quartet of Braised Duck, Chilled Lobster Crystal Jelly, the Golden Palace Teochew Crispy Crab Roll as well as Chilled Mala Jellyfish & Chinese Yam in Aged Vinegar.

There’s also the new comforting Double boiled Kampung Chicken with Fish Maw & Fresh Ginseng soup ($42 per pax) which uses ginseng from Jilin, China for a bittersweet finish to the robust broth.

If you love fish, the Pan-fried Live Fish with Radish & Yellow Bean in Teochew Style (seasonal price) is the one to go for. Featuring your choice of fish, it is first pan-fried and then stewed with leeks, radish, and shiitake mushrooms till the broth is enriched with collagen and milky.

Lastly, there’s the Classic Teochew Pomegranate Dumpling in Thick Pumpkin Broth ($32 per pax, min 2 orders) which is a hand-wrapped “money bag’ with a luxurious filling of bird’s nest, carrots, and mushrooms in a smooth pumpkin soup.
