Chamoon Hot Pot: Guilt-Free Hot Pot With Nourishing Clear Soup Bases like Matsutake Broth

Chamoon Hot Pot, with over 30 outlets across China, has just opened its new location on Scotts Road! They specialise in individual clear soup hot pots like Matsutake Hot pot broth that are both healthy and nourishing.

The interior features a blend of traditional Chinese design and modern elements, creating a calming atmosphere.

The restaurant’s dark wood furnishings and carefully chosen decor contribute to its refined look.

They also offer private dining for a more intimate setting, perfect for personal and business gatherings.

Chamoon Hot Pot Menu

Chamoon Hot Pot offers six soup broths: Cordyceps Hot Pot, Tomato Papaya Hot Pot, Matsutake Hot Pot, Spicy Hot Pot, Morels Pot, and Bamboo Fungus Pot.

Their ingredient selection includes Braised Veal Tendon ($40), Crispy Fried Ribbonfish ($32), and Braised Three Delicacies Platter ($44). For seafood, choose from Canadian Geoduck ($28/100g), Alaskan King Crab ($28/100g), and Leopard Coral Trout ($23.80/100g). 

Meat options feature Japanese Wagyu Chuck Roll (S: $86, L: $128), New Zealand Lamb ($28), and Epencephalon ($30). Hot dishes include Custard Bun ($8.80) and Truffle Fried Rice (S: $22, L: $32).

Pair your hot pot with Chinese teas like Biluochun Green Tea ($18) and Daliangshan Buckwheat Tea ($18), or opt for alcoholic beverages such as Jiang Xiaobai ($28) or Mei Jian (S: $32, L: $78).

Truffle Based Matsutake Mushroom Broth 

We tried the Truffle-Based Matsutake Mushroom Broth ($9.90), which leaned more towards a rich, earthy mushroom flavour rather than a strong truffle presence. 

The broth was light, offering a delicate taste that set it apart from heavier hotpot soups, making it a good choice for those who prefer a milder broths.

Tomato Papaya Hot Pot 

The tomatoes in the Tomato Papaya Hot Pot ($9.90) are fried before simmering in the broth, helping to bring out their natural flavour. While the broth isn’t as rich as some other hot pot options, it still offers a subtle yet pleasant tomato taste that added a refreshing note.

Braised Delicacies Platter

The Braised Delicacies Platter ($44) consisted of Braised Veal Tendon, Lotus Root, and Braised Australian Beef Tongue.

Our favourite on the platter was the Braised Australian Beef Tongue, which had a nice texture and was well braised. The Lotus Root was flavorful and braised to a soft texture, while the Braised Veal Tendon could benefit from a longer braise, as it wasn’t as flavourful as expected for a braised meat. 

Seafood

Norwegian Salmon

The Norwegian Salmon (S:$38, L:$59) was sliced into thick cuts, offering a fresh, buttery taste with a smooth, satisfying texture. It is a great option for those who enjoy sashimi.

Tiger Prawns

The Tiger Prawns ($14.80) came skewered, and a plus point is that the staff will de-shell them for you! Perfect for those who want to avoid messy hands! 

The prawns were meaty and paired well with the savoury soy sauce on the side, adding a nice balance to the dish.

Fresh 5 Head Abalone

The Fresh 5-Head Abalone ($29/portion) were fresh and had a chewy texture but lacked a flavour on its own. It would benefit from dipping sauces or seasoning to enhance the taste.

Meat

A4 Japanese Wagyu

The A4 Japanese Wagyu (S:$86:L,$128) stood out with its buttery texture and well-balanced fat-to-meat ratio. The marbling throughout the beef was flavorful and complemented the light soup base.

New Zealand Lamb

For someone who isn’t usually a fan of lamb, the New Zealand lamb ($28) was surprisingly enjoyable. It lacked the typical gaminess often associated with lamb, offering a milder, more subtle flavour.

The meat was tender and well-prepared, with a tender texture that made it easy to appreciate, even for those who usually avoid lamb.

Hokkaido Pork

The Hokkaido Pork was  a versatile choice, complementing both soup bases well. It’s tender and succulent meat offered a pleasant contrast to the more intense flavours in the broths with its natural sweetness.

Matsutake Dumplings

The Matsutake Dumplings (S;$7.80, L:$12.80) were packed with minced pork and mushroom filling. The savoury filling was well-balanced, with the earthy notes of matsutake mushrooms complementing the tender pork.
