Sonder: New Bakery Bistro And Restaurant Concept In Henderson With Euro-Asian Fusion Cuisine

Have the best of both worlds in Sonder, a new bistro-restaurant concept in the industrial Henderson estate. It’s the first independent venture of Chef Joe Leong that showcases his background in pastry-making and culinary prowess.

He merges his Thai and Chinese background into his cooking, creating a unique fusion that gives rise to an interesting menu. 

Bakery Bistro In The Day

Sonder’s concept is a double-use space. In the day from 12pm-5pm, Sonder is a bustling bakery with sweet and savory fresh bakes. Choose from options like the Butter Brioche, Flavoured Focaccia, lemon meringue tart, apple crumble and more.

They also offer a hearty lunch menu, with items like a Beef Pastrami Sourdough Sandwich ($20) and Whole Pork Knuckle by Grandpa Prin ($45) that’s good for sharing. The pork knuckle comes with a spicy Thai sauce and fresh veggies so you can create your own wraps.

There are also set lunches available with either two or three courses, priced at $30++ and $45++ respectively. Each comes with coffee or tea, plus fresh breads and three specialty butters – sea salt, kombu and black garlic.

Sonder Dinner Menu

By night, Sonder becomes a Euro-Asian restaurant with a selection of meal courses. There’s three courses available: The Petit Menu ($88++ for four courses), The Classic Menu ($138++ for six courses) and The Gourmand Menu ($188++ for eight courses). 

Each course features local Singaporean flavours redesigned into elevated dishes. Courses include Risotto with Roulade of Chicken and Spring Onion Pesto, a reimagination of classic chicken rice. This dish features a chicken roulade in place of the traditional boiled chicken, on top the classic oiled rice.

There’s also the King Tiger Prawn with Scallop Linguine and Lobster Bisque Espuma, an ode the local prawn noodle, and the Kurobuta Pork Collar. The pork collar is inspired by Thai street food Moo Ping, marinated for 24 hours before being charcoal grilled. 

The dinner menu changes every two to three months, plus they can be customized for different events, so there’s more to try!
