Lemuel Chocolate: Bean To Bar Chocolate Concept Store With Delicate Desserts Over At Star Vista

Newly located on Level 1 of Star Vista, right beside Dewgather, Lemuel Chocolate has opened a new Bean to Bar Concept Store that’s three times the size of their previous location. Here, you can sit down and enjoy some drinks and desserts and take a peek into how they produce their chocolate.

Making Their Chocolate From Scratch

Importing more than 15 types of beans from all over the world for their chocolate, Lemuel Chocolate does everything from the roasting of cocoa beans to ageing their chocolate to create the perfect chocolate.

While the idea of bean to bar might sound interesting, the process is also extremely tedious and detailed – from using low temperatures to roast cocoa beans to preserve unique flavours, to ageing the chocolate so that it mellows down the acidity to create a more palatable flavour.

One batch of chocolate takes at least 5 weeks!

New Chocolate Cafe Space in Star Vista

With the new space, Lemuel Chocolate has more options for customers to choose from, such as tarts and mousse cakes. They also have dine-in seating that can accommodate up to 10 people.

Eden

The Eden ($10) looks like a pebble from far to reflect the garden-themed concept Lemuel Chocolate has. It contains 70% Guatemala Mousse, Pear curd, Pecan Milk Chocolate Praline and Pistachio sponge.

While the idea of Pear, Pecan and Chocolate might sound weird at first, this was one of our favourites at Lemuel Chocolate. The pear flavour doesn’t overwhelm the overall balance and provides a nice refreshing sweetness. You can taste the nuttiness and crunchiness from the Pecan praline before the chocolate flavour hits you.

Cacao 85

Lemuel Chocolate pays homage to the cacao fruit with the Cacao 85 ($10). Said to be the dessert with one of the most intense chocolate flavours, perfect for chocolate lovers.

While we were a bit apprehensive at how intense the dessert might be, it’s surprisingly not that jelak. The presence of orange blossom added a delicate floral note to the dessert, with a pinch of saltiness from the chocolate crunch to balance out the flavours.

Jardin

We purchased the Jardin ($9) after falling in love with their desserts to try at home. Lots of Alice in Wonderland vibes with the chocolate mushrooms and moss-looking pistachio sponge.

The pistachio flavour really stood out among the dark chocolate components of the tart. There were also bits of pistachio nuts in the tart which added a playful crunch.

Mini Tarts

The mini tarts come in three flavours, Hojicha Yuzu, Sea Salt Dark Chocolate and Earl Grey Honey.

We loved the Hojicha Yuzu, which gives you a blast of tartness from the yuzu before filling your mouth with the earthiness of hojicha.

The Chocolate Sea Salt one was a bit too salty for our liking. The chocolate is also pretty strong, but we’re glad it’s in a mini form so you’ll probably finish it before the jelak-feeling kicks in.

Bonbons

When at Lemuel Chocolate, you’ll also be drawn to their display of Bonbons, which come in several flavours, including locally inspired ones like Ondeh Ondeh.

We want to give a special shoutout to the Key Lime Pie flavoured one, which contained an oozing lime gel that spilled out the moment we bit into it. There’s also a biscuit praline in this one, so it’s an explosion of textures.

Drinks

The Iced Mocha contained bits and pieces of chocolate that melt the moment they come into contact with your tongue. They use the Infinity Blend from The Coffee Roaster.

If you’re a Hot Chocolate kind of person, Lemuel’s version is quite thick, with a strong and deep chocolate flavour without being overly sweet.

Delicate Desserts at Affordable Prices

Considering how the desserts taste and look at Lemuel Chocolate, we would say the price point is quite affordable ($10 and less). The next time you’re in the area, do consider dropping by Lemuel Chocolate to try out their desserts after lunch or dinner.
