Dusk Restaurant & Bar Collaborates With Danish Winery For Limited Time Wine Pairing Menu

Fancy a sunset dinner complete with good food and even better wine? You can experience both and more at Dusk Restaurant & Bar at Mount Faber! From 1st October to 2nd December 2022, enjoy a selection of Danish wines from award-winning winery Frederiksdal alongside the restaurant’s curated wine pairing menu. 

A Twist On A Singaporean Classic Cocktail

A highlight of this collaboration is the exclusive Mount Faber Singapore Sling ($18++), a take on the quintessential Singapore cocktail. Their iteration is made with Frederiksdal Likør, a high quality cherry wine brewed with Danish Stevns Cherries in cognac casks for at least six months. This intricate cocktail is served with a cable car wine ring at the stem of the cocktail glass, a symbol of the Singapore Cable Car you can see from the view of the restaurant.

Dusk Restaurant & Bar is also presenting a savoury menu ($148++ per pax) lineup to pair with the selection of Danish wines. The menu starts with the Cappuccino of Morel & Italian Summer Truffle paired with the full-bodied Frederiksdal Rancio before an appetizer of Laksa Tiger Prawn Capellini, garnished with giant tiger prawn and laksa infused oil complimented with Frederiksdal Sur Lie that has a rich and deep flavour to pair with the spice.

Patrons can choose between 2 mains: the Pan-Seared Red Snapper, served with a mango salsa and a side of crushed potatoes and garden vegetables or the French-Cut Rack of Lamb with sarladaise potatoes and seasonal vegetables, topped with a red wine reduction. The wine pairing for the course is the Frederiksdal Reserve, a mix of vintage wines matured in French oak barrels for up to 30 months. The different notes of wine shine through depending on your main – coffee and chocolate notes with the red snapper, or fruity cherry umami for the lamb.

Dessert is a Guinness Chocolate Cake with Irish Cream topped with an air-flown Danish cherry compote paired with the Frederiksdal RØD, a sparkling wine grown locally in the island of Lolland. That’s not all! Dusk Restaurant & Bar with be hosting another culinary collaboration with an award-winning guest chef from Copenhagen closer to the end of the year, just in time for the holidays!
